Copy Cat Taco Bell AM Crunch Wrap

This copy cat Taco Bell AM crunch wrap features crispy pan fried tortillas stuffed with all of your favorite traditional breakfast fixings and a drizzle of taco sauce. This recipe is a spot on at home version of the fast food favorite and a great make-ahead, grab and go option.

I’ll let you in on a well-known fact: I am NOT a morning person.

At All.

I make no secret of this, and my family knows it well.

Do not approach me (period) if the coffee has not been brewed.

When my cup’s half gone, you may proceed with caution.

But these Taco Bell AM crunch wraps are easy enough to prep ahead or even make in the morning after I drink a cup of coffee and am still only half a person.

Plus they are full of fluffy scrambled eggs, bacon, and hashbrowns so you know you’re starting the day off on a delicious note.

Ingredients

To make these you’ll need:

  • Tortillas– Large flour tortillas
  • Eggs and milk– To make scrambled eggs
  • Cheese– I recommend shredded sharp cheddar but you could use any you like
  • Hashbrowns– Either crispy shredded hashbrowns or fried hashbrown patties.
  • Taco Bell Sauce– Use the heat level of your choosing
  • Bacon– Cooked crisp
  • Nonstick spray

How to Make

Start by making your scrambled eggs for the crunchwraps by beating the eggs with the milk.

Then pour the beaten eggs into a skillet sprayed with cooking spray over medium heat.

Salt and pepper the eggs to taste.

Stir the eggs regularly, to prevent sticking, until they’re cooked through and light and fluffy.

Set the cooked eggs aside.

Use a large skillet over medium heat to warm the tortillas.

To warm the tortillas, lay a tortilla in the skillet and warm on each side for about 30 seconds so that the tortilla bends without ripping or tearing apart.

Then, put the crunch wrap together by adding half of the cup cooked hash browns or 1 cooked hash brown patty to the center of the tortilla.

Next, spread half of the eggs evenly out over the hash browns and drizzle on the Taco Bell sauce.

Sprinkle out half of the cheese, and finally add two pieces of bacon crumbled.

To close the crunch wrap, flip the side closest to you, to the center, then flip the right and left side to the center.

Finish by closing the last right and left side to the center.

You will end up with a five sided wrap.

Spray the skillet you used to heat the tortilla in with some non-stick spray, heat for about 30-40 seconds on medium heat and then transfer the wrap to the skillet with the folded side down.

The wrap will seal itself closed as it cooks.

When the bottom is nicely browned, carefully flip the wrap and heat on the other side, until that side is golden brown too.

Serve with additional Taco Bell sauce for dipping.

How many Crunch Wraps does this make?

This recipe makes 2 wraps as written but it’s easy to double or triple or cut in half depending how many people you are feeding.

How can I prep this ahead of time?

If you want to cut down on your morning prep work, make the different elements like the scrambled eggs and bacon the night before.

Then you just reheat them before assembling the wraps.

Tips and Tricks

  • When purchasing your tortillas for this recipe, make sure they’re the largest size they have to offer. The package should reference ‘burrito’ size. Anything else won’t fold properly and is too tiny to hold the right amount of filling.
  • Don’t have bacon? Diced ham or cooked crumbled sausage are both yummy substitutions.
  • Want to have enough eggs for the filling, but also extra to eat on the side or just to have on hand for later? Make a batch of our fool proof fluffy scrambled eggs.
  • Sharp cheddar is pretty much our go to shredded cheese in recipes. This recipe has plenty of wiggle room for other options. A fiesta blend, shredded Monterrey jack, or even a slightly spicy pepper jack all would work great.

  1. Too funny! I am a morning person. I do much better if my day gets off to a productive start. But we aren’t big breakfast eaters anyway. This would make a perfect lunch or breakfast for dinner item for us though, because we love breakfast food even if we don’t eat it for breakfast often!

  3. Hi Meaghan, so I have these secret thing for what I call the “taco bell pinwheel”, not even sure what it is, but I find it so relish. This is the breakfast version of it, love it! Sharing!

    1. Sounds like you might be talking about the regular Crunchwrap! We make those too and eventually I will pause long enough to take pics before going ham on one so I can post the recipe, lol.

    1. I haven’t, but assume they would freeze well. I would probably bake them to crisp them up rather than microwave them. The only problem I see would be potential loss of ‘crunch’ from the center layer.

    Okay where do you find the sauce or can you buy this all somewhere I prefer to buy it because I’m not a good cook but unfortunately Taco Bell is not serving breakfast around me anymore and I absolutely love the crunchwrap but I don’t know where to get the sauce. To me it’s just not as good without it.

    1. Almost all major grocery stores carry Taco Bell brand sauce in the Mexican/Hispanic section near the taco shells. I got mine at Walmart.
