Ever have a sub sandwich and been disappointed by the way you’ll get a mouthful of meat but the tomatoes or onions sort of drip off?

Or maybe you take another bite and it’s all veggie and no meat or cheese since it slid down the roll?

Well these chopped sub sandwiches are the solution to that!

What are chop chop sandwiches?

Chop chop sandwiches or chopped sub sandwiches are a recipe that went viral after Big Eric’s BBQ shared it on TikTok.

The sandwiches themselves are sort of a cross between the NYC bodega staple chopped cheese sandwiches and Italian grinders.

The idea is that by chopping everything up and mixing it together before you spread it on your rolls, you will get the perfect bite each time and not wind up with a giant glob of mayo and no meat.

Ingredients

To make this you’ll need:

  • Lettuce– Shredded
  • Deli meat– Thinly sliced turkey and ham
  • Other veggies– Sliced banana pepper rings, thinly sliced red onion, and sliced tomatoes
  • Mayonnaise– I almost always recommend real mayonnaise; however, if you love Miracle Whip- you can sub that in this recipe.
  • Salt and pepper
  • Hoagie rolls– Large ones, preferably ones from the bakery section in the store.

How to Make

These chopped subs are pretty easy to make!

If you can chop and mix, you can make them.

Start by spreading the lettuce out in an even layer on a large wooden cutting board.

Then pile on all the remaining ingredients except the salt and pepper on top of the lettuce.

Chop everything using a sharp knife and mix.

Keep doing this until everything’s finely diced to the same size and evenly incorporated.

Separate the mixture into 3-4 piles that’re roughly the same length as your hoagie rolls.

Top each chopped pile with an open hoagie roll by sliding your knife under the meat mixture and flipping the hoagie over holding the mixture in the center.

Repeat this for all the hoagies.

Serve immediately and enjoy!

How many subs does this make?

This recipe makes 3-4 XL subs depending on how full you stuff the rolls.

As written, I can pretty much feed all 6 of us with these sandwiches.

Storing Leftovers

I don’t recommend storing leftovers. 

The sandwiches will get soggy and the lettuce will wilt.

Tips and Tricks

  • If taking these for lunch or making them ahead of time, wrap the subs in parchment paper and refrigerate them until ready to eat. When ready to enjoy, just cut the sub in half straight through the parchment paper. The wrapper will hold in the juices so it’s less messy to eat.
  • You can use different lunch meats to suit your tastes. Roast beef and chicken are also really good in these chopped sandwiches. Similarly, you can switch up the cheeses too. My husband loves Swiss in his, and the sons love using Colby Jack.
  • Love other things on your sub sandwiches? Add them to the mix! Just make sure everything is chopped to the same finely diced consistency so that all the flavor’s are evenly incorporated into each bite.

Ingredients

  • 16 oz shredded lettuce
  • 4 oz thinly sliced turkey
  • 4 oz thinly sliced ham
  • 1/3 cup sliced banana pepper rings
  • 1/2 thinly sliced red onion
  • 6 oz extra thin sliced sharp cheddar cheese
  • 3/4 cup mayonnaise
  • 1/2 - 3/4 cup sliced tomatoes
  • salt and pepper to taste
  • 3-4 large hoagie rolls

Instructions

    Great recipe! We loved it! Tastes better than a Cousins Club Sub! I’m making these for our trip to the Waterpark tomorrow, for lunch. Adding the mayo & lettuce right before we leave and bringing this in a bowl so we can add to the sub buns when we eat.
