Chicken Rice Pilaf Casserole
Chicken rice pilaf casserole is the perfect quick, easy recipe for a weeknight meal! With only 5 ingredients, this family friendly cheesy chicken rice casserole is the best way to get a meal on the table without any crazy effort.
As a busy mom, I’m always trying to come up with ways to keep meals simple.
They need to be quick and easy for my sanity, but also with ingredients nobody can find a reason to complain about.
Because kids, am I right?
There’s really nothing in this chicken rice pilaf casserole my guys- or most kids for that matter- will complain about.
Plus, this is a very easy, budget friendly recipe.
We all could use more of those in our lives, too!
Ingredients
To make this you’ll need:
- Chicken– I like using chopped rotisserie chicken just for ease here. You can adjust the amount based on your family’s preferences.
- Rice A Roni– 2 boxes of the rice pilaf variety.
- Cream of chicken soup– Yep, good old condensed soup. If you don’t have cream of chicken, you can substitute any cream of soup you have on hand.
- Gravy– Canned chicken gravy.
- Cheese– Shredded cheddar
How to Make
This chicken rice casserole is so easy to make!
To do it, spread the chopped chicken evenly into a 9×13 baking dish you’ve sprayed with nonstick spray.
Set the dish aside while you cook the Rice A Roni according to the package directions, removing it from the heat when the rice is about 3/4 of the way cooked and still has some broth in it.
Spoon the rice over the chicken in an even layer.
Then whisk the cream of soup with the gravy in a small bowl.
Pour this mixture evenly out over the rice layer.
Sprinkle the cheese over top of the gravy mixture.
Bake the casserole at 350 degrees for 25 to 30 minutes or until it is bubbly and the cheese has started to form a golden crust.
Take the dish out of the oven and let it rest for a few minutes before serving.
Enjoy!
Storing Leftovers
Store leftovers in an airtight container in the fridge for up to 3 days.
Reheat in the microwave until warmed through.
Tips and Tricks
- Make sure you don’t fully cook the Rice A Roni. It will finish cooking in the oven and you want some of the rice broth in the casserole dish.
- Want to add some veggies into this? Add a couple cups of chopped steamed broccoli or even frozen peas into the mix to get some green in.
- Don’t skip the resting time. The casserole needs a chance to set before you scoop it out into individual portions.

- 1 can chicken flavored gravy
- 2 cups shredded cheddar cheese

- Cook the boxes of rice a roni together, according to the package directions- stirring occasionally. Remove the skillet from heat when the rice has cooked 3/4's of the way through, and there's still broth left in with it.2 boxes rice pilaf Rice A Roni
- Spoon the rice mixture evenly out over top of the chicken, spreading as necessary for an even layer.
- In a small mixing bowl, whisk together the cream of soup and the gravy until evenly combined. Pour & spread this evenly out over the rice layer.1 can cream of chicken soup, 1 can chicken flavored gravy
- Sprinkle the cheese evenly out over top.2 cups shredded cheddar cheese
- Bake the casserole at 350 degrees for 25-30 minutes, or until hot and bubbly and the cheese has begun to form a golden brown crust.
- Remove the dish from the oven, and let it rest for 2-3 minutes before serving so it can 'set'.

We used to make this many years ago. My grown children and nieces and nephews have been asking for it but I just couldn’t remember what went into it.
I never thought I would find a recipe on-line but here it is. This is the exact way we made it!
I made tonight for dinner. Tripled the recipe because I knew they would text each other. We had a full house. Every one came by for “chicken casserole”. (One of my nephews drove and hour and a half.) I served it with steamed broccoli and carrots on the side. Dinner was a big hit. We had a great time. Food brings every one together. Thanks so much for posting this.
