Cheesy Pulled Pork Dip

Cheesy pulled pork dip is the perfect appetizer for watching the game or tailgating. Full of tender barbecue pork, this is an addicting queso style treat you won’t be able to get enough of!

Fall is upon us friends and that means one thing.

And no I’m not gonna say pumpkin.

In a house with 4 boys, it means football.

And in my humble opinion the best part of any game isn’t the game itself but the food.

Like this pulled pork dip.

We’re talking cheesy, meaty, dippable goodness that is perfect on chips.

Plus it’s easy to make when we have leftover pork on hand.

Ingredients

To make this you’ll need:

  • Cream cheese– Not quite a whole block. Let it soften prior to use.
  • Sour cream– Full fat is best.
  • Seasoning– Seasoned salt, garlic powder, onion powder
  • Pulled pork- This is perfect for using up leftover barbecue pulled pork.
  • Cheese– I like to use shredded Mexican cheese blend but cheddar or Jack would also work.
  • Corn– Use a drained can of corn kernels. You could sub frozen or fresh if you prefer. If you use frozen, make sure you thaw it first.
  • Anaheim pepper– Seeded and diced.
  • Toppings– Sliced red onion, cilantro leaves, jalapeno slices, barbecue sauce

How to Make

This dip is so easy to make.

To do it, add the softened cream cheese, sour cream, seasoning, pork, and peppers to a mixing bowl and whip it together until smooth.

Once it’s smooth, fold in the corn and half the cheese.

Then spread the mixture out into an 8″ skillet.

Top the dip with the remaining cheese and bake at 350 for 25 to 30 minutes.

Once the cheese is melted and bubbly, remove the dip and let it cool.

Let the dip rest for 5 minutes before serving.

Dipping Ideas

This pulled pork dip is so good with tortilla chips. We also like it with:

  • pretzels
  • slices of peppers
  • crusty pieces of baguette
  • crackers

Can I make this ahead of time?

You can make the pork ahead of time and then assemble the dip the morning before you want to serve it. 

Bake it just before you plan to enjoy it.

Storing Leftovers

Store leftovers in an airtight container in the fridge for up to 3 days.

Reheat in the oven until warmed through.

Tips and Tricks

  • The dip will vary from spicy to tangy or even slightly sweet depending on your choice of barbecue sauce so go with one you know and like. We used a Carolina style sauce in this, but not a mustardy one.
  • For more heat, add a diced jalapeno. You could also swap the anaheim peppers for a spicier variety- like poblano.
  • The corn adds nice texture but you can omit it if you prefer.
  • Give it a smoky spin by mixing in a teaspoon of liquid smoke with all the other ingredients.

Ingredients

  • 6 oz cream cheese softened
  • heaping 1/3 cup sour cream
  • pinch seasoned salt
  • pinch garlic powder
  • pinch onion powder
  • 1 lb pulled pork barbecue
  • 1 cup shredded Mexican blend cheese divided
  • 1 8.75 oz can corn kernels drained
  • 1 Anaheim pepper seeded & minced

For Topping

  • thinly sliced red onion
  • cilantro leaves
  • pickled jalapeno slices
  • BBQ drizzle

Instructions

  • To a mixing bowl add the cream cheese, seasonings, pork, peppers.
  • Using a hand mixer, whip the mixture together until smooth and evenly combined.
  • Using a spatula, fold in the corn and half of the cheese until evenly combined.
  • Transfer the dip mixture to an 8 inch skillet, and spread it out evenly.
  • Sprinkle the remaining cheese out evenly over the dish.
  • Bake the pulled pork dip at 350° for 25-30 minutes.
  • Let the dip rest for 5 minutes before serving.
