Cheesy Pineapple Casserole
Cheesy pineapple casserole is a sweet and savory side dish that knocks it out of the park! It pairs well with ham so it is ideal for holidays like Easter, Christmas, or even Thanksgiving.
Pineapple and cheese.
I know, it sounds weird but don’t knock the combo until you’ve tried it.
It is absolutely the perfect pairing and it’s not even debatable like Hawaiian pizza.
It’s such a showstopper that your guests will never know it is actually so easy to make.
Ingredients
To make this you’ll need:
- Sugar– Granulated
- Flour– To sweeten and thicken the pineapple filling
- Pineapple– Both a can of drained pineapple chunks and an undrained can of crushed pineapple
- Cheese– Shredded cheddar
- Crackers– I recommend Ritz crackers. Crush them.
- Butter– Melted.
How to Make
The prep on this pineapple casserole is so easy!
To make it, whisk together both the sugar and flour in a large mixing bowl to evenly combine it.
Then, stir in the pineapple and 1 cup of cheese to the sugar and flour mix.
Scoop the pineapple mixture into a lightly cooking sprayed 8×8″ OR 9×9″ baking dish and use a spatula to spread it out into an even layer.
Sprinkle the remaining cheese evenly out overtop of the dish.
Stir together the crushed crackers and melted butter in a separate mixing bowl.
Spread the buttered cracker crumbs evenly out over the casserole.
Bake the casserole at 350° for 20 minutes, or until bubbling and the crackers are golden brown.
Serve warm and enjoy!
Storing Leftovers
Store leftovers in an airtight container in the fridge for up to 4 days. Cover it with foil and reheat in a hot oven until warmed through.
Tips and Tricks
- I like to crush my crackers in the sleeve before I ever even open it as it saves me dishes, but if you prefer to ‘see’ the results then add the crackers to a large ziplocking bag before lightly crushing with a rolling pin or the flat side of a meat mallet.
- Watch the cracker crumbs while cooking, especially as it approaches the end of the cooking time. The buttered crackers can go from golden brown to burnt quickly if left unattended.
- Make sure to drain the pineapple chunks so it isn’t too soupy.
- If you don’t want it as sweet, you can reduce the amount of sugar.

- 1 20 oz can crushed pineapple UNdrained
- 1 1/3 cup shredded cheddar cheese
- 1 sleeve Ritz crackers crushed
- 2 tbsp butter melted
Instructions
- Add both the sugar & flour to a large mixing bowl. Whisk together to evenly combine.

- Lightly grease an 8x8" OR 9x9" baking dish with non stick cooking spray, and then transfer the cheese & pineapple mixture to the prepared dish. Use a spatula to spread it out into an even layer.
