Cheesy Chicken Doritos Casserole
Cheesy chicken Doritos casserole is a comfort food the whole family will love. This rich casserole features tender of delicious rotisserie chicken and diced tomatoes with green chiles tossed into a creamy sauce under a topping of crushed Doritos and cheddar cheese.

Casseroles are seriously the best, easiest dinners ever.
You’ve got all of your ingredients and pretty much just stir them all together and then bake as instructed.
Bam! Like magic, out comes a delicious meal.
And this time it’s a dinner the kids will actually love.
They can literally have their chips and enjoy them too.
For dinner.
How often does that happen in everyday life?!
It’s every kid’s dream come true.
And every once in awhile I love making their dreams come true with this chicken Doritos casserole.
Ingredients
To make this you’ll need:
- Chicken– Chopped rotisserie chicken or leftover baked or grilled chicken.
- Cheese– Shredded cheddar
- Cream of chicken soup– You could also sub cream of cheddar
- Half and half– Don’t substitute for lower fat dairy.
- Sour cream– Full fat
- Canned tomatoes– The diced kind with green chiles. Drain it.
- Taco seasoning
- Doritos– Crushed nacho cheese flavor Doritos.
How to Make
Like most casseroles, this Doritos casserole is so easy to make!
Just add the chicken, 1 cup of cheese, soup, half and half, sour cream, tomatoes, and taco seasoning to a large mixing bowl.
Stir the mixture together until everything’s evenly combined.
Then spray a 9×13 inch baking dish with non-stick cooking spray.
Spread half of the crushed chips evenly out over the bottom of the dish.
Top the crushed chips with half of the chicken mixture, dolloping it evenly out over the chips and spreading it out evenly.
Repeat the layers.
Finish the casserole by sprinkling the last 1/2 cup of cheese evenly out over the top of the casserole.
Tightly cover the casserole with aluminum foil.
Bake at 350 degrees for 30-32 minutes or until the casserole is hot and bubbly.
Remove the foil from the casserole and let the casserole rest for 2 minutes.
Serve and enjoy!
Topping Ideas
You can top this chicken Doritos casserole with your favorite Tex Mex fixins.

- salsa
- jalapenos
Storing Leftovers
Store leftovers in an airtight container in the fridge for up to 3 days.
Reheat in a hot oven until warmed through.

- Want to add a plant to this? You could stir thawed frozen corn into the the filling.
- For a kick, you could add some canned jalapenos.
- Want it with zero spice at all? Use plain diced tomatoes and not the kind with chiles.

Cheesy Chicken Doritos Casserole
Ingredients
- 2-3 cups chopped rotisserie chicken
- 1 1/2 cups shredded cheddar cheese
- 1 can cream of chicken soup
- 1/2 cup half & half
- 1/2 cup full fat sour cream
- 1 can diced tomatoes with green chiles, drained
- 1 1/2-2 tbsp taco seasoning
- 4 cups crushed nacho cheese Doritos
Instructions
- In a large mixing bowl, add the chicken, 1 cup of cheese, soup, half & half, sour cream, tomatoes, and taco seasoning. Stir together until everything's evenly combined.
- Spray a 9x13" baking dish with non-stick cooking spray. Spread half of the crushed chips evenly out over the bottom of the dish.
- Add half of the chicken mixture, in dollops, evenly out over the chips. Use the back of a spoon the gently spread the mixture out evenly. Repeat the layers.
- Sprinkle the last 1/2 cup of cheese evenly out over the top of the casserole.
- Tightly cover the casserole with aluminum foil. Bake at 350 degrees for 30-32 minutes, or until hot & bubbly.
- Remove the foil, let the casserole rest for 2 minutes, and serve.

Changed it a bit instead of Rotel and taco seasoning. I used chopped broccoli, celery, onions, and a little parsley and chives. So good!!
