Breakfast Tacos

Breakfast tacos are delicious way to start the day! This recipe features bold chorizo, crispy bacon, and fluffy eggs folded into a warm flour tortilla for a satisfying morning meal.

My love language is tacos.

Forget words of affirmation or quality time.

Nope.

Tacos are way better than anything.

I think so and my sons definitely agree.

So what better way to show my love for them by starting their day with breakfast tacos?

What the heck is a breakfast taco?

There are tons of variations on breakfast tacos but the in general a breakfast taco consists of eggs and other toppings like breakfast meats or veggies inside a flour tortilla.

Delicious!

Ingredients

To make these you’ll need:

  • Butter– To cook the sausage in
  • Chorizo sausage– You could substitute another kind of sausage if you prefer a more mild flavor.
  • Bacon– Cooked crisp and crumbled
  • Scrambled egg ingredients– Eggs, milk, salt, and pepper
  • Flour tortillas– Warmed

How to Make

Breakfast tacos are pretty easy to make!

To do it, start by adding the butter, sausage and bacon to a skillet, set over medium high heat.

Cook the sausage and bacon, crumbling it often, for 7-8 minutes or until it’s browned throughout.

Using tongs and several paper towels, soak up all of the grease.

Repeat this as needed.

Remove the crisp bacon to a paper towel lined plate.

Whisk the eggs, milk, salt, and pepper together in a mixing bowl.

Pour the egg mixture into the still hot skillet, and stir them often.

Continue stirring with a non stick spatula until done, stirring often until medium to large curds form and you have fluffy scrambled eggs.

Set the eggs aside.

Then, assemble the tacos by adding a layer of eggs to the center of the warmed tortillas, dividing them evenly out over all the tortillas.

Top the eggs with the cooked meat mixture and toppings of choice.

Serve warm, and enjoy!

Breakfast Taco Topping Ideas

Like tacos you’d eat at other points in the day, part of the fun of breakfast tacos is piling on the extra toppings.

Our favorites include:

  • shredded cheese
  • sliced green onions
  • salsa
  • sour cream
  • avocado
  • jalapenos

Storing Leftovers

I don’t recommend storing assembled breakfast tacos in the fridge, however you can store the eggs and cooked meats in two separate airtight containers in the fridge for up to 4 days.

Can I freeze breakfast tacos?

Yes.

To freeze the breakfast tacos, make them as directed above, let them cool, and then place the tacos on a cooking sheet.

Put the cooking sheet in the freezer and freeze for 2-4 hours. 

Remove the frozen tacos from the cookie sheet and transfer them to ziplocking freezer bags.

Frozen breakfast tacos will last about 3 months.

To reheat them, pop one in the microwave and microwave it until warmed through.

Tips and tricks

  • These make a great portable breakfast to go. If you take these to go, warm them up in the microwave. Then wrap them in aluminum foil. They will stay warm for about 30 minutes.
  • You can add other things, like crispy hash browns, breakfast potatoes, or even sauteed onions and peppers.
  • We have a gas stove, so instead of warming our tortillas in the microwave, we heat them briefly over the open flame. If you choose this option, watch the tortillas carefully! they can go from slightly crisped to burnt quickly.

Ingredients

  • 2 tbsp butter
  • 1 16 oz pkg seasoned chorizo
  • 1 6 bacon strips cooked crisped, crumbled
  • 12 large eggs
  • 1/4 cup milk
  • salt & pepper to taste
  • 8 flour tortillas warmed

Instructions

  • Add both the butter, sausage and bacon to the skillet, set over medium high heat.
    2 tbsp butter, 1 16 oz pkg seasoned chorizo, 1 6 bacon strips

  • Pour the egg mixture into the still hot skillet, and stir them often. Continue stirring with a non stick spatula until done, stirring often. Set aside.
  • Assemble the tacos by adding a layer of eggs to the center of the warmed tortillas, dividing them evenly out over all the tortillas.
    8 flour tortillas
  • Add the cooked meat mixture evenly to each taco, spooning it out over the eggs.
  • Add toppings of choice, then serve warm, and enjoy!

Notes
