Wafeltjes: Belgian Waffle Cookies

Wafeltjes are Belgian waffle cookies that you will absolutely love. These buttery treats are a must make and will take your taste buds on a European vacation!

Sons 1 & 2 took German to fulfill their foreign language requirement.

Their German teacher was pretty awesome and has really managed to make the class fun and interesting, as well as educational.

Through one of their German projects we discovered these Belgian waffle cookies.

The good stuff. 

We all love these buttery little cookies.

They are delicious and easy to make since they use a waffle iron.

At one point, son # 2 took it upon himself to make a batch and bring it to share with his class.

They were so good they even earned him some extra credit and managed to charm the socks off his crush.

What are Wafeltjes?

Wafeltjes are a mini waffle like cookie popular in Germany and Belgium and other parts of Central Europe.

They are buttery, rich, and totally delicious!

They’re also very easy to make, and enjoy.

Ingredients

To make these you’ll need:

  • Flour– All purpose
  • Butter– Go for unsalted.
  • Sugar– Granulated
  • Eggs– For binding and richness
  • Baking powder– For leavening
  • Vanilla extract– If possible use real vanilla extract and not imitation.
  • Salt– To balance the flavors.

How to Make

To make these, start by melting the butter without browning it.

Then, put the flour, sugar, baking powder, salt and the vanilla extract in the bowl of a stand mixer.

Mix on medium low speed and slowly add the eggs one at a time.

Let it mix for one minute then slowly pour in melted butter.

Cover the bowl tightly and put in fridge for at least one hour.

After letting the dough sit in fridge heat up the waffle iron.

Make small balls of dough and drop them onto a waffle iron .

Let them bake until golden brown and remove from iron with wooden skewer onto a cooling rack.

Store in covered container.

What’s The Best Way To Serve Waffle Cookies?

You can serve them as is, warm & dust them with powdered sugar, or even serve them with a side of Nutella or chocolate dipping sauce.

The sons actually like to dip there’s in melted chocolate, add sprinkles, and then flip them over to let them dry before enjoying them with a cold glass of milk.

Storing

These do best in an air tight container on the counter for 3 to 4 days.

Tips and Tricks

  • We did 4 at a time because we wanted them to be small but you could also do two bigger ones.
  • Don’t skip chilling the dough. It needs time to rest.
  • These make excellent bake sale goodies. Just package them in cellophane baggies to keep them fresh.

Ingredients

  • 4 cups of flour
  • 1 cup butter
  • 1 1/2 cups sugar
  • 6 eggs
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract

    these are cute! This recipe was also very good. We did a mini waffle party with ours! Everyone loved it 😀 This recipe is good overall, but if you’re looking for authentic it’s a little off. Don’t add the baking powder, and if you have access to one, use a galette iron. This is like the Americanized version. Very good, though! 🙂
