Thanksgiving Nachos
Thanksgiving nachos are a creative way to use up your leftover turkey in an entirely new dish! Turkey gets layered with tortilla chips, cheese, and veggies before being topped with cranberry salsa. A unique twist on your leftovers!
One of the cardinal rules in this household: we don’t waste food.
Especially Thanksgiving leftovers.
Not when I toil away for so long to make sure we have a delicious holiday meal with all the fixins.
You can bet your bottom dollar that we sure as heck are going to enjoy each and every last morsel.
But there are only so many times a person can eat Thanksgiving leftovers in sandwich form before you need something fresher feeling.
And these Thanksgiving nachos are just that.
An entirely new meal thanks to chips, cheese, cranberry salsa, lime and cilantro that will help you stretch that leftover turkey.
Ingredients
To make these you’ll need:
- Butter– To crisp the turkey meat up in
- Leftover turkey– Chopped. Remove the bones and skin.
- Cheese– Shredded mozzarella though you can use any shredded cheese you like.
- Roasted Brussels sprouts– Leftover. You could use other leftover veggies like leftover corn or roasted green beans instead.
- Cranberry salsa– This is a yummy way to use up leftover cranberry sauce
- Tortilla chips– The base of any nacho recipe
- Fixings– Sour cream, fresh chopped cilantro, and lime juice
How to Make
Like any good leftover recipe, these Thanksgiving nachos are so easy to make!
To do it, melt the butter in a large skillet over medium high heat.
When the butter has melted, add the turkey, tossing it in the melted butter to coat it and then spread it out evenly.
Let the turkey cook in the melted butter for 3 to 4 minutes without stirring it until it gets golden brown and crispy.
Then give it a good stir and let it cook for another 2 to 3 minutes more, stirring often.
Take the skillet off the heat and assemble the nachos.
To assemble the nachos, spread out half of the tortilla chips in an even layer on a rimmed baking sheet.
Top the chips with half of the turkey and half of the cheese, both spread out in an even layer.
Spread the remaining chips out over the turkey and cheese layer.
Then top the chips with the remaining turkey followed by the remaining cheese and then finally the Brussels sprouts.
Bake the nachos at 400 degrees until the cheese melts and the chips toast, or about 10 minutes.
Take them out of the oven and top them with cranberry salsa, sour cream, and chopped cilantro.
Squeeze lime evenly out over top of the nachos if desired.
Serve and enjoy!
Storing Leftovers
Like other nachos, these are best enjoyed right after you make them.
If you store them, they will get soggy in the fridge.
Tips and Tricks
- You can add other toppings like chopped red onions and sliced jalapenos.
- Omit any of the toppings you don’t like.
- If you don’t have leftover turkey, you could brown up some ground turkey to use in this recipe.

Ingredients

- 1 1/2 cups leftover roasted brussels sprouts halved
- cranberry salsa
- sour cream
- cilantro leaves roughly chopped
- lime juice for serving (optional)

Instructions

- Bake at 400° until the cheese has melted and the chips are toasted, roughly 10 minutes.
- Top the thanksgiving nachos with cranberry salsa, sour cream, and cilantro leaves. Squeeze the lime juice evenly out overtop.
- Serve warm and enjoy!
