Thanksgiving Nachos
Thanksgiving nachos are a creative way to use up your leftover turkey in an entirely new dish! Turkey gets layered with tortilla chips, cheese, and veggies before being topped with cranberry salsa. A unique twist on your leftovers!

- 2 tbsp butter
- 3 cups chopped leftover turkey
- 2 cups shredded mozzarella cheese
- 1 1/2 cups leftover roasted brussels sprouts halved
- cranberry salsa
- sour cream
- cilantro leaves roughly chopped
- lime juice for serving (optional)

Melt the butter in a large skillet over medium high heat. Once melted add the turkey, tossing it to coat, then spread it out in an even layer.

Cook, without stirring, for 3-4 minutes- just until golden brown and crispy. Stir and continue cooking for another 2-3 minutes more, stirring often. Remove the skillet from heat.
Spread half the desired tortilla chips out in an even layer on a rimmed baking sheet. Top with half the turkey and half the cheese, spread out in an even layer.

Spread the remaining chips out in an even layer overtop followed by the remaining turkey, cheese, and finally the sprouts.
1 1/2 cups leftover roasted brussels sprouts
Bake at 400° until the cheese has melted and the chips are toasted, roughly 10 minutes.
Top the thanksgiving nachos with cranberry salsa, sour cream, and cilantro leaves. Squeeze the lime juice evenly out overtop.
Serve warm and enjoy!
- You can add other toppings like chopped red onions and sliced jalapenos.
- Omit any of the toppings you don't like.
- If you don't have leftover turkey, you could brown up some ground turkey to use in this recipe.
