Thanksgiving Nachos

Thanksgiving nachos are a creative way to use up your leftover turkey in an entirely new dish! Turkey gets layered with tortilla chips, cheese, and veggies before being topped with cranberry salsa. A unique twist on your leftovers!

Ingredients

  • 2 tbsp butter
  • 3 cups chopped leftover turkey
  • 2 cups shredded mozzarella cheese
  • 1 1/2 cups leftover roasted brussels sprouts halved
  • cranberry salsa
  • sour cream
  • cilantro leaves roughly chopped
  • lime juice for serving (optional)
  • tortilla chips

Instructions

  • Melt the butter in a large skillet over medium high heat. Once melted add the turkey, tossing it to coat, then spread it out in an even layer.

  • Cook, without stirring, for 3-4 minutes- just until golden brown and crispy. Stir and continue cooking for another 2-3 minutes more, stirring often. Remove the skillet from heat.
  • Spread half the desired tortilla chips out in an even layer on a rimmed baking sheet. Top with half the turkey and half the cheese, spread out in an even layer.

  • Spread the remaining chips out in an even layer overtop followed by the remaining turkey, cheese, and finally the sprouts.

  • Bake at 400° until the cheese has melted and the chips are toasted, roughly 10 minutes.
  • Top the thanksgiving nachos with cranberry salsa, sour cream, and cilantro leaves. Squeeze the lime juice evenly out overtop.
  • Serve warm and enjoy!

Notes

  • You can add other toppings like chopped red onions and sliced jalapenos.
  • Omit any of the toppings you don't like.
  • If you don't have leftover turkey, you could brown up some ground turkey to use in this recipe.
