I’m not a habitual ‘crazy couponer’, as my husband lovingly calls me during my binges. From time to time though? This Mama likes to save money as much as the next person.

Bonus points when it’s on something I have to buy anyway, like food to feed my hungry, hungry hippos (aka boys).

I also have developed this inherent sense for knowing when things will be on sale.

It may seem like common sense to some, but it took me years to hone my skill of knowing when seasonal items (and particularly what items) would be going on sale.

I know now that in the weeks leading up to Thanksgiving, usually about two weeks before things like cranberry sauce and stuffing get marked down- drastically. Best sales of the year!

When we first got married, I might’ve bought a box or two- I mean it was on sale after all. That’d be it though.

Since then, I’ve learned that stuffing isn’t just something you stuff your roaster with– it has soooooo many more yummy uses. Thank God for that revelation!

Nowadays, I reeeeeaaaaaalllllllyyyyyy stock up when the stuffing goes on sale.

Which is a really good thing, because it’s the secret ingredient to my family’s favorite weeknight meatloaf- Stove Top Stuffing Mix Meatloaf.

It’s not Grandma’s meatloaf, that takes me some time to get together and has a lengthier list of ingredients. So it’s more of a weekend, special occasion recipe. 

With this, I can set my beef to thaw in the fridge before work, come home, and in about 10 minutes have this bad boy in the oven. 

A genius hack, cooking meatloaf in a bundt pan reduces the amount of cook time a traditional meatloaf requires. It also gives it a beautifully crisp exterior. And who doesn’t love the crispy bits of a meatloaf?!

Perfectly seasoned, tender, every bite is perfection. Serve it with mashed potatoes & gravy on the side, or go for the ultimate presentation by ‘filling’ it with the potatoes, and liberally drizzling it with thick, rich brown gravy.

This is budget-friendly comfort food, like Mama made, but revised for today’s busy schedule.

Stove Top Stuffing Mix Meatloaf

The most tender meatloaf we've ever made or tasted, this one uses boxed stuffing mix as it's secret ingredient. Baked in a bundt pan it makes a gorgeous presentation, especially when the center's loaded with mashed potatoes & the whole thing's drizzled in rich brown gravy.

Ingredients

  • 1 pkg Stove Top Stuffing Mix, any flavor
  • 1 cup hot water
  • 1 1/2 lbs lean ground beef
  • 1 pkg brown gravy mix
  • 1 scant cup cold water
  • 2 large eggs, beaten

Instructions

  • Add the stuffing mix to a medium sized mixing bowl. Stir in the hot water and let the mixture 'rest' for 5 minutes. Stir again, and set aside.
  • To a large mixing bowl, add the ground beef, gravy mix, cold water, and egg. Using your hands, squish and knead all of the ingredients together until evenly combined.
  • Stir in the stuffing mix until evenly combined.
  • Spray a bundt pan with non stick cooking spray. Spoon the meatloaf mixture into the prepared pan. Using your hands, or a spatula, press the meat down into a firm,  even layer.
  • Bake the meatloaf at 350 degrees for 45-55 minutes, or until no longer pink inside.
  • Let the meatloaf rest, away from heat, for 5 full minutes. Carefully turn the meatloaf out onto a plate, serving tray, or cutting board.
  • Slice, and serve with mashed potatoes and your favorite brown gravy.

    Thanks for the clarification. I just picked up store brands chicken stuffing equivalent, low sodium Brown gravy packet. Used a split of beef and pork because that was on hand. Used 5 mini loaf pans set up with a probe thermometer for 160°, because I don’t have a bundt pan, though I may have to get one because the crunchy bits are tasty. Served with mashed potatoes from scratch, and frozen sweet corn. Thanks for the recipe.

  4. Can I use a regular meatloaf pan because I don’t have a bundt pan and would I have to change anything like the temperatures? I’ve done a similar meatloaf with the stuffing mix that I found on the Kraft website.

  5. I made this recipe with lean ground turkey. I don’t have a bundt pan so I used a square glass Pyrex dish. Excellent dish. Simple to make. This was a family pleaser because the grandkids loved it.

    1. So glad the whole family enjoyed it Jocelyn! The bundt pan is mostly for presentation purposes, and to give it a fun little twist. A dish like you used or a meatloaf pan will also work.

  7. Hi! Im 100% Italian and meatloaf was never a frequently made dish. Im going to give ut a try for dinner tonight. Being Italuan, I learned to add grated cheese in most dishes to avoid a bland taste. The last meatloaf I made tasted like a giant meatball! I noticed there was no salt in the recipe. Im assuming the stuffing and gravy mix add enough salt? Thanks so much for your comments. Francesca

    1. You’re correct, Francesca! There’s more than enough sodium in the stuffing and gravy mix. Meatloaf’s such a tricky thing when it comes to finding the right flavor profile. Grated cheese sounds like a super yummy addition!

  8. Very good! I used a pack of au jus mix because I didn’t have brown gravy. Adjusted with a little less water. Yummy!

    This was really good. Cooked it in a loaf pan for 45 minutes and it came out perfect. Only had about 1.1 lb of meat (ground beef/pork combo) so it didn’t need anymore time in the oven. I will definitely be making this again. Thanks for the recipe.

    OMG I just saw this recipe and knew immediately I was going to have to do this. I bought a dozen, yes 12, boxes of Stove Top Dressing at a Wal-Mart store in Houston for $0.25 a box 2 months ago. I’m thinking ok what’s wrong with these? Nothing! They were even date coded for 09/19. Yea!!! BUT what am I going to use 12 boxes of Stove Top dressing for. Well #1 your meatloaf recipe. Now if I can figure out what I’m going to use the other 6 boxes for I will be in heaven (ah 6 are being saved for the meatloaf. lol). Thank you so much for sharing.

    I’ve been making this meatloaf for years. I first started making it while I was living in the apartment. (In the late 70’s). The first meatloaf was made with ground turkey and I used turkey stuffing mix, and topped it with turkey gravy. This was our poor mans turkey for thanksgiving. It really turned out great and I’ve given the recipe out to lots of friends. I started using the beef pork combo as an homage to Mom ‘s meatloaf. Since the original meatloaf I’ve use lots of different combinations of the stuffing mix and different meats. They have all turned out great! Glad to see the recipe printed by someone!

  12. Made this recipe with ground beef and ground pork and added fresh mushrooms too. Homemade mashed potatoes and added chopped mushrooms stir fried in butter to the gravy. Peas and it was delicious!! Thank you so much for this delicious meal. Will do again for sure.

    Found this recipe after finding I had no oats for my meatloaf. Mostly followed the recipe (added some sautéed onion and celery and a cube of tomato bullion) even though I thought there would be too much stuffing. Turns out it was the perfect amount, and oh so tasty! Made in a loaf pan, topped with a glaze of equal parts ketchup, bbq sauce, dijon, and brown sugar. Yum! Thank you!

    1. You can! Instead of putting it into a bundt pan, shape it into a loaf. Just know that this isn’t your typical set it, and forget it kind of crockpot meal. This meatloaf will only need to cook for 5-5 1/2 hours on low to be completely done. Too long, and you’ll end up with a charred brick instead.

    This comes together quickly and is really good. I highly recommend getting some sort of gravy and having this with mashed taters! I sauteed a good sized shallot and added it to the mix with extra seasonings. Good stuff!

    I have been making my variation of this for years Basically I use stove top in place of bread crumbs. There is enough seasoning and salt in the stuffing mix so I don’t add onion soup mix. Use dairy instead of all water. Do not add too much liquid. 2 eggs is richer than one. Makes great Salisbury Steak or meatballs too!

    Just okay in my opinion…tasted more like stuffing than meatloaf…even the consistency was more “stuffing like”. Not bad, but don’t think I will make again
