S’mores Ice Cream Pie
S’mores ice cream pie features ice cream heaped onto a graham cracker crust and topped off with toasted marshmallows and hot fudge. The perfect flavor combinations for any s’mores lover!
Summer means two things as far as we’re concerned.
S’mores and ice cream!
Why not smush the campfire treat and the frozen dessert together in one deliciously chill combination?
This s’mores ice cream pie does just that.
And it’s the perfect thing when you want the ooey gooey goodness of s’mores but the heat makes a campfire or bonfire unimaginable.
It still has all the flavors you want, without having to roast yourself like a marshmallow, over a fire.
Ingredients
To make this you’ll need:
- Graham cracker pie crust– a 9″ store bought or homemade crust.
- Ice cream– 48 ounces of vanilla ice cream. Let it soften on the counter first so you can easily stir it.
- Chocolate chips– Milk chocolate will give you the most authentic s’more flavors.
- Marshmallows– Mini ones work best here
- Heavy cream– There is no substituting lower fat dairy
- Hot fudge topping– Your favorite brand or make your own
- Graham cracker sheets– Optional as garnish
How to Make
Making this s’more ice cream pie is super easy!
Start by making your pie crust if you are making it from scratch or just remove the packaging of your store bought crust but save the lid for later!
When the ice cream is stir-able, use a sturdy spatula to stir in the chocolate chips and 1 cup of marshmallows until evenly incorporated.
Scoop the ice cream mixture into the pie crust.
Put the filled pie crust into the freezer so that it sits levelly.
Let it freeze until it’s hard, about an hour.
Once the pie is frozen, whisk the cream in the bowl of a stand mixture on medium speed for 2-4 minutes, or until the cream has thickened and soft peaks have formed.
Take the pie out of the freezer and evenly spread the whipped cream out over top.
Top the center of the pie with the remaining marshmallows, toasting them with a kitchen torch if desired.
Heat a small skillet over warm heat with around 1/3 to 1/2 a cup of the hot fudge topping.
Stir it until it melts.
Drizzle the hot fudge over the pie.
Slice and serve immediately, or return to the freezer for a maximum of two hours, before enjoying.
Storing Leftovers
You can freeze the leftover pie for up to a few days if any of this pie manages to last that long!
Tips and Tricks
- Want to skip making homemade whipped cream? Use Cool Whip instead!
- Have fun with your ice cream flavors. Vanilla gives you the most traditional s’mores taste though you could get crazy and substitute other flavors that you think would go well with the classic chocolate, marshmallow, graham combination like rocky road, peanut butter swirl, or even cookies and cream.
- Feel free to add more hot fudge if desired.
- If refreezing again before serving, let the pie rest at room temperature for 5 minutes before serving.

Ingredients

- 1 1/3 cups mini marshmallows divided
- 1 cup heavy cream
- hot fudge topping
- graham cracker sheets some broken into pieces, another crushed into crumbs- for garnish (optional)
Instructions
- Prepare your pie crust, if making from scratch-- otherwise you can opt to keep it in the tin or remove it to another dish of your choosing. Keep in mind it's going in the freezer later.
- Allow the ice cream to sit on the counter and soften a few minutes-- just until stir-able, not melted. Use a sturdy spatula to stir in the chocolate chips and 1 cup of marshmallows until evenly incorporated. Scoop the mixture into the pie crust.
- Place the filled pie crust into the freezer so that it sits levelly. Allow it to freeze until hard, about an hour.
- Add the cream to the bowl of a stand mixture. Whisk on medium speed for 2-4 minutes, or until the cream has thickened and soft peaks have formed. Remove the pie from the freezer and evenly spread the whipped cream out over top.
- Top the center of the pie with the remaining 1/3 cup of marshmallows. Use a kitchen torch to lightly toast, if desired. Sprinkle the graham cracker pieces and crumbs evenly out overtop.
- Heat a small skillet over warm heat. Add 1/3-1/2 of the hot fudge topping to the heated skillet and stir until melted. Working quickly, use a spoon to drizzle the hot fudge over the pie.
- Slice and serve immediately, or return to the freezer for a maximum of two hours.
