It never ceases to amaze me all the delicious hacks that come off of TikTok.

And this easy focaccia bread using frozen dinner rolls holds up.

While it isn’t quite the same texture as traditional focaccia with a bit of a fluffier center, it’s so easy and yummy that it’s definitely worth cutting a few corners for.

And it’s close enough that the sons have dubbed this FAUX-CACCIA, which I think is super clever and appropriate.

What is focaccia anyway?

Focaccia is a flat Italian bread often brushed with olive oil and fresh or dried herbs.

It’s very similar to the taste and texture of pizza dough.

In fact, sometimes, it’s called “pizza bianca” or white pizza because it is so similar. 

It is very versatile too and can be either a side dish or sandwich bread.

Ingredients

To make this you don’t need much, only:

  • Frozen dinner rolls– We used a 24 count of Rhodes dinner rolls.
  • Extra virgin olive oil– This bread relies on the flavor of the olive oil so don’t substitute this with a different oil and make sure the olive oil you’re using is of quality.
  • Dried herbs and spices– Whatever herbs you like along with garlic powder and sea salt. We used dried oregano and rosemary.

How to Make

This is ridiculously easy to make and very beginner friendly!

To do it, add 2 tablespoons of olive oil to a 9×13 inch baking dish and use a pastry brush to paint it all over the bottom and insides of the dish.

Then, add the 24 frozen dough balls to the dish, spacing them out as evenly as possible.

Cover the dish with cling wrap, making sure to seal it to keep air out.

Let the rolls sit until completely risen.

Uncover the risen rolls and drizzle the remaining half cup of olive oil evenly out over the rolls.

Then press the dough down into the dish using the handle of a wooden spoon or your fingertips to create little divets or pockets in the punched down dough evenly through the whole dish of dough. 

Season the dough evenly with the remaining ingredients.

Bake at 350° for 25 minutes, or until golden brown and cooked through.

Serve warm and enjoy!

Storing Leftovers

This bread is best served fresh but you can store any leftovers wrapped tightly on the counter for up to 2 days. 

If you have leftovers, I recommend warming it in the oven before reserving.

Can I use fresh herbs?

Yes, you can use fresh herbs.

If you use fresh herbs, I recommend chopping them and brushing them on the dough after it has baked since fresh herbs are more delicate.

Tips and Tricks

  • We ‘over’ proofed our dough, meaning let it rise far more than we would’ve if we were making dinner rolls. The dough was well above the rim of the baking dish by 1/4-1/2″.
  • Don’t spread the cling wrap too tightly, you want to allow some room for the dough to rise.
  • You can use whatever herbs you enjoy, fresh or dried. We used a blend of rosemary and oregano but thyme, basil, or parsley would all be good choices.

Ingredients

  • 24 count frozen Rhodes dinner rolls

  1. can u please help me..i was trying to make this focaccia ia bread and i. confused about covering with seran wrap, u cover the bsking dush or the actual rolls ? …i tried with laying the seran on top of the rolls and they are not rising at all been 3 hours. please help tyia kathy

    1. You cover the dish with the plastic wrap. Depending on the temperatures, they may just still not be thawed enough to rise. Give it time, and they should eventually rise as expected.

Easy and delicious – using really whatever dried or fresh herbs you have on hand, as well as the opportunity to really go over the top with maybe some caramelized onion, black olives, sundried tomatoes, chopped garlic, anchovy, a little lemon rind, etc. Pizza without the sauce or cheese – for those who want the layering. I do want to point out that your carb count of 1g is not at all accurate. The minimum carbs would be equal to those on the Rhodes package (or other frozen roll brand) based on serving size, plus any others you might add in toppings (negligible). One Rhodes roll is 150 calories, and 28 carbs, with 1 g sugar and 3 fiber. I presume no one that is diabetic or keto tracking is relying on your specific data – but just wanted to share my observation so you can make a correction if you desire. I personally am all in for a big treat with our chicken parmesan tonight and it won’t be just one serving! Thank you!
