Sausage Breakfast Burritos

Have breakfast ready to grab and go on busy mornings with these easy sausage breakfast burritos. Easily made ahead of time, these burritos freeze & reheat well. Tender sauteed veggies, fluffy scrambled eggs, cooked crumbled sausage, and cheddar cheese are wrapped up in soft flour tortillas for a filling hand held breakfast. It’s the breakfast for people who aren’t typically breakfast people!

 

So if you’ve followed along with us for any amount of time, you know that this mama doesn’t do breakfast.

Yes I make sure there are breakfast items available, but All self serve, a la carte style.

Hot breakfast?

Dad does giant brunches every Saturday and Sunday.

Otherwise? It’s pretty much cold cereal ’round these parts.

But I do occasionally take pity on my crew who put up with all my whims, and all my willfulness in the kitchen.

What can I say?

I run a tight ship, usually it goes my way or the highway, but every now and then I hear a request or two, or I just generally try to prevent a mutiny.

And that’s where these handy, dandy sausage breakfast burritos come in.

All cooked up and pre-packaged, all ready to heat and eat.

Breakfast Burritos- The Easiest Grab & Go Option For Busy Mornings

Breakfast burritos are a great option for grab and go mornings- whether you’ve got a herd of kids to usher out the door, or even if the hassle is just getting yourself up and out on a regular morning.

Whatever the struggle, whatever kind of morning, one thing’s for sure- we’re all happier when we aren’t hungry, and a good breakfast can lead to a great day. 

At least that’s what I preach to myself and my kids- so I try to always have great options on hand, even when I’d much rather be sitting in silence because no one has let me finish my coffee yet.

If these had to be cooked to order, there’d never be hot breakfast on school mornings.

Luckily, these are more of the meal prep variety and easily made ahead on weekend evenings when I’ve hit my stride.

There’s also not much planning or prep work required, again making them right up my alley!

Making Burritos For Breakfast- A Hearty Meal Rolled In A Tortilla

You only need a few ingredients to make this genius breakfast idea. Really.

  • sausage
  • hash browns
  • onions
  • peppers
  • eggs
  • tortillas
  • cheese

That’s it. Simple ingredients that when combined together create a truly magical Tex Mex breakfast experience.

It’s fun, it’s filling (which is arguably the most important thing), and it doesn’t require utensils.

That last one being a huge bonus for me, both as I get myself wherever I need to go, and also as I lovingly boot each kid out the door.

Once you’ve got all of your ingredients assembled, these breakfast burritos require hardly any effort at all to assemble.

Working with one burrito-sized tortilla at a time the filling of sausage, eggs, hash browns, peppers, and onions is spooned into the center of the tortilla. 

Cheese is then spread out evenly over the top of the filling.

The ends of each tortilla are folded in, then the sides and the burrito is then rolled up like a jelly roll.

Repeat until all the burritos are filled & rolled.

These sausage breakfast burritos can be served immediately, or prepared and transferred to a serving try to prepare for storage.

Freezing Sausage Breakfast Burritos

If I know we’re going to eat the whole batch throughout the week, then we just add the cooled burritos to a air tight container and store it in the refrigerator.

Sometimes though, I really like to get ahead of the game and really make things ahead of time to have on hand. 

To freeze these breakfast burritos to heat & eat later, wrap each individual burrito in wax paper.

Then wrap each one in aluminum foil. 

They can be frozen for up to one month.

When you’re ready to eat, remove the foil wrap & wax paper.

Then transfer the burrito to a microwave safe plate. 

Microwave on high for 2 to 2-1/4 minutes, turning the burrito over once during re-heating.

Let stand for 20 seconds before eating.

These also re-heat just as well in a toaster oven if a microwave isn’t an option.

Ingredients

  • 1 lb ground pork sausage
  • 1-1/2 cups frozen shredded hash brown potatoes
  • 1/4 cup diced white onion
  • 1/4 cup diced green and/or red pepper
  • 4 eggs lightly beaten
  • 12 flour tortillas 8 inches, warmed
  • 1/2 cup shredded cheddar cheese
  • Picante sauce and sour cream optional

Instructions

  • In a large skillet, cook the sausage over medium heat until no longer pink, breaking it up as it cooks. Drain and set aside.
  • Add the potatoes, onion and pepper to the skillet and cook, stirring, for 6-8 minutes or until tender.
  • Pour the eggs in and stir, cooking until they're set. Return the sausage to the skillet and stir everything together to evenly incorporate.
  • Spoon the filling off center onto each of the tortillas. Sprinkle cheese evenly out over the filling. Fold sides and ends over filling and roll up.
  • Serve with Picante sauce and/or sour cream, if desired.

Notes

To freeze and reheat the burritos: Wrap each burrito in waxed paper and then again in foil. Freeze for up to 1 month.
To use, remove the foil and the waxed paper. Place one burrito on a microwave-safe plate. Microwave on high for 2 to 2-1/4 minutes, turning the burrito over once during re-heating. Let stand for 20 seconds before eating.
These also re-heat just as well in a toaster oven if a microwave isn't an option.
