Saltine Cracker Cakes

Saltine cracker cakes turn plain old soda crackers into sweet, pancake like fritters. This vintage recipe will wow you with its comforting goodness and save you if you are ever in a pinch.

I loved cooking with my Grandma.

She was the queen of old fashioned recipes that don’t seem like much when you look at the ingredients, but in reality combine to make something so much better than the sum of its parts.

Like these Saltine cracker cakes.

You’d never think that these would taste as good as they do.

With a little vanilla and cinnamon, they make a sweet fritter similar to a pancake that is oh so yummy.

What are Saltine Cracker Cakes?

Saltine cracker cakes are a Depression era recipe that you can serve or top like a pancake.

You could also leave out the vanilla and cinnamon for a savory fritter.

These little cakes go by different names depending on where you’re from. You may have heard them called cracker cakes, flitters, or soda cracker pancakes.

Ingredients

To make these you’ll need:

  • Saltine crackers– Don’t have them? Use other crackers like Ritz or Club crackers.
  • Water- To make a batter.
  • Egg– To bind everything
  • Butter– Melted
  • Flavorings– These are optional but for my sweet version, I use a touch of vanilla and cinnamon.

How to Make

These are super easy to make.

To do it, crush the two sleeves of crackers in a large bowl and add the water.

Stir and let the crackers sit in the water to soak it up for about 2 minutes and then stir until the crackers and water become a paste .

The paste may have some chunks of cracker and that’s okay.

Then, mix in the egg, melted butter, vanilla extract and cinnamon.

After you’ve mixed in the rest of the ingredients to form a thick batter, heat a lightly greased nonstick pan over medium heat.

Once the pan is hot, add a scoop of the batter and flatten into a pancake shape by lightly pressing it with a spatula.

Cook the pancake until the bottom starts to turn a golden brown, about 4 minutes, then flip and cook the other side until golden brown as well.

Repeat until all the batter has been used.

Serve warm with fruit and syrup if desired.

This recipe makes 8 cakes and we serve 4 people with 2 cakes each.

Storing Leftovers

This recipe doesn’t make great leftovers so I recommend making only what you think your family will eat.

  • We like this dish served and topped like a pancake, but you can switch up the flavors.
  • Want to make it more interesting? Top it with fresh fruit or even raisins.
  • For a savory version, leave out the vanilla extract and cinnamon. You could replace those flavors with garlic and pepper or even a little cheese if you prefer.

Ingredients

  • 2 sleeves of saltine crackers
  • 1 cup water
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon

Instructions

  • In a large bowl, crush the two sleeves of crackers and add the water, stir and allow the crackers to absorb the water (about 2 minutes)
  • Stir until the crackers and water become a paste (some chunks are okay)
  • Mix in the egg, melted butter, vanilla extract and cinnamon; mixture will be quite thick
  • Heat a lightly greased nonstick pan over medium heat, add a scoop of the batter and flatten into a pancake shape
  • Allow to cook until the bottom starts to turn a golden brown, about 4 minutes, then flip and cook the other side until golden brown as well
  • Repeat until all the batter has been used ( you will get 8 cakes)
