Pulled Pork Chili

Pulled pork chili is a delicious way to use up your leftovers in a completely different but super satisfying dinner. Slow cooked to perfection, this hearty chili recipe needs almost no prep work to yield yummy results!

We make a lot of pulled pork in this house.

This time of year, we fire up our smoker and make this Smoked Pulled Pork Recipe pretty often.

When it turns cooler, we make slow cooker pulled pork a lot.

So it’s safe to say that there’s always some leftovers on hand.

And while we love a good pulled pork sandwich and Cheesy Pulled Pork Dip, when we have lots of leftovers and want an entirely new dinner, chili it is.

It’s a switch up from other chili recipes with more of a barbecue flavor and oh so delicious and filling!

Ingredients

To make this recipe you’ll need: 

  • Pulled pork– Use up those leftovers!
  • Tomatoes– A large can of fire roasted crushed tomatoes and 2 cans of diced tomatoes
  • Seasoned chili beans– I used 3 cans total- 1 medium and 2 mild. You can use all medium for extra heat or all mild to keep the heat level down.
  • Onion– Diced red onion
  • Seasoning– Chili powder and your favorite brand of barbecue rub
  • Beef broth– To thin the liquid
  • Barbecue sauce– Your favorite brand

How to Make

This pork chili recipe is the epitome of a dump and go crock pot recipe.

In other words, it’s super easy to throw together.

To do it, stir all of the ingredients together in the bowl of your slow cooker. 

Cover and cook on low heat for 6-8 hours.

After 6 to 8 hours, ladle it into bowls.

Serve with your favorite garnishes and enjoy!

Topping Ideas

Some of our favorite toppings for this chili include:

  • fresh cilantro leaves
  • sour cream
  • diced avocados
  • shredded cheddar cheese
  • diced jalapenos
  • crushed tortilla chips

What If I Don’t Have Pulled Pork?

No leftovers in your fridge? Not a problem!

You can add a 2 to 2.5 pound pork shoulder or roast to the bowl of the slow cooker.

Pork loin or pork tenderloin will also work. Make sure they’re around the same weight mark so they’re cooked through and tender in time.

Just add all of the other ingredients on top, and cook as instructed.

Shred it, stir, and then serve as instructed.

If you use uncooked pork, cook it closer to 8 hours for doneness.

And if you unsure, remember you can use a meat thermometer to check. Pork is safe to eat when cooked to 145 degrees F.

Storing Leftovers

Store leftover pulled pork chili in air tight containers in the fridge for up to 3 days.

Can I freeze pulled pork chili?

Yes! Both pulled pork and chili recipes freeze well.

To freeze it, let it cool completely and transfer to a freezer safe container or zip locking freezer bag.

Freeze the chili for 3 to 6 months.

Tips and Tricks

  • As is this chili is mild to mild medium spicy. You can adjust ingredients to suit your spice preferences.
  • To make the chili spicier, you can add a diced jalapeno, more chili powder, use all medium spicy seasoned beans, and/or pick a spicy barbecue sauce.
  • If mild suits your family better, use all mild seasoned beans, choose a mild barbecue sauce, and/or reduce the chili powder.

Ingredients

  • 4-6 cups pulled pork
  • 1 28 oz can fire roasted crushed tomatoes
  • 2 15 oz cans diced tomatoes
  • 3 15 oz cans seasoned chili beans I used 1 medium & two mild
  • 1 cup diced red onion
  • 2 tbsp chili powder
  • 1 tbsp barbecue rub
  • 32 oz beef broth about 4 cups
  • 3/4 cup barbecue sauce

Instructions

  • Add all of the ingredients to the bowl of your slow cooker. Gently stir together to evenly combine.
  • Cover and cook on low heat for 6-8 hours.
  • Ladle the pulled pork chili into bowls, and serve with cilantro leaves, sour cream, and diced avocados for garnish.
