Overnight Cherry French Toast Bake
This overnight cherry French toast bake is a winning make ahead breakfast or brunch perfect for holidays and special occasions. Cherry pie filling gets baked on top of decadent French toast for an easy crowd pleasing breakfast casserole.

After the flurry of present opening and cocoa drinking and maybe cleaning up shreds of wrapping paper, what’s left?
Breakfast for 4 hungry boys, 1 hungry husband, and 1 very hungry me.
And also 1 me who’s tired from working extra hard in the days leading up to the big day to make it magical.
I don’t have it in me on Christmas morning to pull out an involved breakfast.
So instead, I make it special by putting together this showstopping overnight cherry French toast bake.
It’s a classic French toast casserole that you put together before you go to bed but laced with cherry pie filling so it feels extra special.
The perfect thing for a holiday morning!
Ingredients
To make this you’ll need:
- Sugar– Brown
- Cinnamon
- Eggs
- Evaporated milk– I find this gives the most rich, caramelized flavor.
- Bread– The kind from the bakery not the kind that you’d make a pbj on. You want it to be day old. Cut it into 20 slices.
- Cherry pie filling– a 15 ounce can of your favorite variety with an additional can for topping if desired
How to Make
Like most overnight French toast bakes, this cherry variety is so easy to make!
To do it, whisk together brown sugar, cinnamon, eggs and milk.
Then arrange the bread pieces in a large oven-safe casserole dish and pour egg mixture over the bread.
Top the unbaked French toast with cherry pie filling.
Cover tightly with foil and refrigerate it overnight.
In the morning, remove from the refrigerator and put the casserole dish in the cold oven.
Then set temperature for 350 degrees and bake the French toast for 35 minutes.
Remove from oven and serve.
Enjoy!
Storing Leftovers
Store leftovers in an airtight container for up to 3 days.
Reheat in them in the microwave or in a hot oven until warmed through.
Serving Suggestions
Cherry French toast casserole is amazing with classic toppings like butter and syrup, but you can turn it into a real treat with a big old scoop of vanilla ice cream and/or a dollop of whipped cream on top.
Tips and Tricks
- You can add a teaspoon of vanilla extract to the egg mixture if desired.
- If you are using a glass casserole dish, you must make sure that you put the cold dish into the oven when it is also cool. If you put a cold glass dish into a preheated oven, it will shatter.
- Spray the casserole dish well with nonstick spray prior to putting the bread in it so nothing sticks.

- 1/4 cup brown sugar
- 1 tsp cinnamon
- 4 eggs
- 2/3 cup evaporated milk
- 15 oz canned cherry pie filling additional can for adding more topping in the morning, if desired
- 20 slices day-old deli bread we used French
Instructions
- Mix together brown sugar, cinnamon, eggs and milk.1/4 cup brown sugar, 1 tsp cinnamon, 4 eggs, 2/3 cup evaporated milk
- Add bread pieces to a large oven-safe casserole (13x9 is good) and pour egg mixture over the bread. Top with cherry pie filling.Cover and refrigerate overnight.20 slices day-old deli bread, 15 oz canned cherry pie filling
- In the morning, remove from the refrigerator and place in oven and then set temperature for 350 degrees. Bake for 35 minutes. (If using a glass casserole dish, it is imperative that you do not preheat the oven and then place a refrigerated dish in the oven, as it will shatter.)
- Remove from oven and serve.
