One Pot Mexican Chicken & Rice
Chicken and rice are very common ingredients, and the basis of many a good meal. Added together in a single pot with a blend of tomato sauce, broth, veggies, and herbs- this one pot Mexican chicken & rice comes together into a delightful dinner.
I love Mexican food. In all it’s many varieties, interpretations, and forms. It’s seriously one of my favorite cuisines.
Authentic… Tex Mex… I do not discriminate. I love them all. I could happily eat it for every meal.
Currently, I’d give nothing more than to be able to go eat out at a Mexican restaurant. Since that’s not an option- I’m having to learn to adapt and make my favorites at home.
Not a big deal at all, other than I’m very often lazy and love the other more convenient option.
What Is Arroz Con Pollo Made With?
All that being said Mexican chicken & rice is one of my absolute favorite dishes. It’s also known as arroz con pollo in Spanish. Literally chicken and rice.
It’s a traditional dish in Latin and Spanish cultures, similar to paella. The meat and rice are slow simmered with tomatoes, chicken broth, and herbs.
Veggies are often added, even extra meats. The dish can be made as complex as you want, but the base recipe is very simple.
While we have come to know and love it as ‘Mexican’ chicken and rice, be careful who you say that to.
Apparently there’s a hot debate that’s raged for ages over whether it originated in Spain or Latin America, specifically Puerto Rico.
The great thing about this one pot Mexican chicken & rice dish? I mean besides the incredibly tasty flavors? It can all be made in one pot.
All of it. Rice and all. It’s like magic. Dinner magic.
One pot to dirty, one pot to clean, one delicious meal to consume. And if I haven’t convinced you yet… it’s quick.
Super quick. Less than 30 minutes quick. Don’t believe me? Here, let me walk you through it.
Cook chicken –> stir everything else in –> let cook 20 minutes –> DONE. Piece. of. chicken & rice. cake.
Our recipe for the classic dish makes for a delicious chicken and rice dinner.
It’s so flavorful, you really could stop right there. And as we mentioned earlier- we love adding veggies to ours, specifically frozen peas & corn.
So it’s a one stop shop for me on busy nights, and even my pickiest eaters don’t complain about veggies when this dish is served.
And let me highlight the whole ONE POT aspect of this meal. A simple meal, filling for the whole family, that only leaves you with a single dish to wash up afterwards?! That’s like a dream come true!
What Is Mexican Chicken & Rice Served With?
While it’s true I love a one dish meal, it isn’t always enough to flesh out to make it into an entire dinner for the family. This one pot Mexican chicken & rice is a great start though.
We serve green beans on the side with this, I supposed because we’re American and green beans go with everything for us.
But we also like to serve it with black beans and tortilla chips on the side. It makes a wholesome meal, and then you can add whatever toppings you’d like!

One Pot Mexican Chicken & Rice
Ingredients
- 2 boneless skinless chicken breasts
- 2 tbsp olive oil
- Salt & pepper
- 1 cup white rice
- 2 cups chicken broth
- 1 8 oz can tomato sauce
- 1 tsp beef bouillon or 1 beef bouillon cube
- 2 tsp minced garlic
- 1 tsp chili powder
- 1/2 cup frozen peas & 1/2 cup frozen corn
Instructions
- Cut chicken into one inch pieces and season with salt & pepper. Heat olive oil in a skillet over medium heat and add chicken. Cook until just barely browned, but not cooked through.
- Add one cup of long grain white rice and saute for one minute. Add remaining ingredients, stir, and bring to a boil. Cover and reduce heat to low for about 20 minutes or until rice is tender and fluffy. If there is still liquid in the pan, uncover and simmer until the liquid is reduced.
