One Pot Taco Spaghetti
We gave spaghetti a Tex Mex makeover with this quick and easy one pot taco spaghetti. Featuring ground beef, plenty of veggies, and fettuccini pasta in a seasoned taco sauce- it’s a 15 minute meal the whole family will love.
Over the years we’ve come up with some real one-pot dinner winners. Dinner’s that are fast, filling, and something the whole family can enjoy.
For example, there’s Cajun Chicken Alfredo, Balsamic Chicken & Veggies, and even Dirty Rice.
They’ve all got one thing in common– great flavors combined in a single pot to wash and ready to go from stove to table in under 30 minutes.
Which is huge when you’re busy and under the gun to get dinner done before the bedtime routine starts, after all the after school and evening activities are done.
Loaded with all the Tex Mex flavors that we adore in our tacos and tossed with a saucy pasta base, this One Pot Taco Spaghetti is as tasty as it is easy.
It’s a bowl full of bold South-western flavors that’s ready to enjoy in only 15 minutes.
Ingredients Needed
Like all the best quick and easy recipes, this one has a relatively simple ingredient list.
To make it you’ll need:
- Pasta – Either fettuccini or linguini noodles. I don’t recommend spaghetti pasta though. The wider shaped noodles help grab onto the meat and vegetables better.
- Canned Vegetables – Specifically diced tomatoes with chiles, green chiles, black beans, and corn kernels.
- Onion – Yellow recommended, but white will also work- peeled & diced
- Pepper – Large red, yellow, or orange bell pepper- seeded & diced
- Taco Seasoning – Whatever brand you prefer
- Taco Sauce – Not salsa
- Ground Beef – We like lean ground beef, but you can use any kind. Cooked, crumbled, and drained.
- Broth – Beef broth
- Garnish – For garnish when serving we recommend either fresh cilantro leaves or thinly sliced green onions.
Once you’ve gathered all of your ingredients you’re ready to get started!
How To Make
From start to finish this easy pasta recipe only takes about 15 minutes to throw together.
Start by breaking the fettuccini noodles evenly in half. You can divide them in half to making breaking them apart easier, and add them to a large heavy bottomed pot.
Add all of the remaining ingredients to the pot. Give everything a gentle stir to evenly combine.
Bring the mixture to a rolling boil, then immediately reduce the heat to medium. Let the pasta simmer, uncovered, for 15 minutes. Stir the pasta occasionally to prevent it from sticking together and cook just until it’s tender.
Serve the pasta warm, topped with cilantro leaves and/or sliced green onions for a tasty finish.

Storing
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
Unfortunately when tested, this recipe hasn’t held up well to freezing and thawing.
TIPS & TRICKS
- I like to cook several pounds of ground beef on the weekend, drain it well, then divvy it up in equal portions for using in meals throughout the week to speed up prep time. If that doesn’t appeal to you and you still want to make it a one pot recipe, just brown the ground beef in the same pot first and make sure all grease is drained from the meat and removed from the pot before proceeding.
- Don’t like ground beef? Substitute ground turkey, or even ground chicken, in it’s place.
- Do not drain the canned tomatoes, their juice makes up part of the liquid needed to properly cook the pasta.

One Pot Taco Spaghetti
Ingredients
- 12 oz fettuccine noodles
- 10 oz can diced tomatoes with green chilies
- 5 oz can diced green chilies
- 1 large onion diced
- 1 large red or orange pepper diced
- 10 oz can black beans drained and rinsed
- 3/4-1 cup frozen corn kernels
- 3 tbsp taco seasoning
- 1 cup taco sauce
- 1 lb ground beef cooked and drained
- 3 cups beef broth
- fresh chopped cilantro, or thinly sliced green onions, to garnish (optional)
Instructions
- Break the fettucine noodles in half. Place the noodles, diced tomatoes, green chilies, onion, bell pepper, black beans, frozen corn, taco seasoning, taco sauce, ground beef, and broth into a Dutch oven or other large soup pot. Add the ground beef and stir the ingredients in the pot to evenly incorporate.12 oz fettuccine noodles, 10 oz can diced tomatoes with green chilies, 5 oz can diced green chilies, 1 large onion, 1 large red or orange pepper, 10 oz can black beans, 3/4-1 cup frozen corn kernels, 3 tbsp taco seasoning, 1 cup taco sauce, 1 lb ground beef, 3 cups beef broth
- Bring the mixture to a boil and immediately turn the heat down to simmer over medium-heat. Let the mixture simmer for 15-minutes, stirring occasionally, or until the pasta is tender with no lid.
- Serve the pasta topped with fresh cilantro and/or sliced green onions.

Hi im Lucy from Cheshire in England i made this dish and found it delishious froze some and took it to work for my meal breaks the smell drew good comments in canteen. I have made it sinsce but do veggie version with cauliflower( neede use it up) lovely recipes just sad himself is no longer with us.xxx
