One Pot Taco Spaghetti

We gave spaghetti a Tex Mex makeover with this quick and easy one pot taco spaghetti. Featuring ground beef, plenty of veggies, and fettuccini pasta in a seasoned taco sauce- it's a 15 minute meal the whole family will love.

Ingredients

  • 12 oz fettuccine noodles
  • 10 oz can diced tomatoes with green chilies
  • 5 oz can diced green chilies
  • 1 large onion diced
  • 1 large red or orange pepper diced
  • 10 oz can black beans drained and rinsed
  • 3/4-1 cup frozen corn kernels
  • 3 tbsp taco seasoning
  • 1 cup taco sauce
  • 1 lb ground beef cooked and drained
  • 3 cups beef broth
  • fresh chopped cilantro, or thinly sliced green onions, to garnish (optional)

Instructions

  • Break the fettucine noodles in half. Place the noodles, diced tomatoes, green chilies, onion, bell pepper, black beans, frozen corn, taco seasoning, taco sauce, ground beef, and broth into a Dutch oven or other large soup pot. Add the ground beef and stir the ingredients in the pot to evenly incorporate.

  • Bring the mixture to a boil and immediately turn the heat down to simmer over medium-heat. Let the mixture simmer for 15-minutes, stirring occasionally, or until the pasta is tender with no lid.
  • Serve the pasta topped with fresh cilantro and/or sliced green onions.

Notes

  • I like to cook several pounds of ground beef on the weekend, drain it well, then divvy it up in equal portions for using in meals throughout the week to speed up prep time. If that doesn't appeal to you and you still want to make it a one pot recipe, just brown the ground beef in the same pot first and make sure all grease is drained from the meat and removed from the pot before proceeding.
  • Don't like ground beef? Substitute ground turkey, or even ground chicken, in it's place.
  • Do not drain the canned tomatoes, their juice makes up part of the liquid needed to properly cook the pasta.
