Every once in a while a recipe takes over social media and actually lives up to the hype, and Ina Garten’s brownie pudding is definitely one of those recipes!
After seeing it all over TikTok, I knew I had to find out if this famous dessert was really as good as everyone claimed.
The answer is a resounding yes thanks to its irresistible combination of a crackly top, rich brownie flavor, and a warm, pudding-like center.

But of course, I’d expect nothing less from the Barefoot Contessa herself.
It’s the kind of dessert that tastes like it was high effort even though it is easy enough for a beginner to make.
Ingredients
To make this you’ll need:

- Butter– Unsalted butter melted plus extra unmelted, softened butter to grease your pan.
- Eggs– Ina always uses extra large eggs because she believes they give you more egg for the buck. But if you don’t have extra large eggs, you can substitute 4 large eggs or 5 medium eggs.
- Sugar– Granulated.
- Cocoa powder– A good quality cocoa powder.
- Flour– All purpose.
- Vanilla bean paste– You can buy it online here. Don’t have any? Substitute real vanilla extract.
- Toppings– Powdered sugar for dusting and ice cream.
How to Make
Believe it or not, Ina Garten’s brownie pudding is incredibly easy to make.
Start by beating your eggs and sugar together in the bowl of your stand mixer for roughly 10 minutes or until it’s smooth.

During this time, sift together your flour and cocoa and set aside.
Keep the mixer on and add your vanilla bean paste to the egg and sugar mixture followed by your flour and cocoa mixture.

Once everything is well combined, slow pour in the melted butter, keeping the mixer on.
Stop mixing once it’s combined.
Pour the brownie pudding dish into a butter greased 2 quart oval casserole dish.

Put the casserole dish into a larger dish and fill it with hot water until half of the casserole dish is covered to make a water bath.
Bake at 325 degrees for one hour.

Let it cool for 15 to 30 minutes.
Top it with powdered sugar, and serve with ice cream.

How will I know when the brownie pudding is done?
You can’t check for doneness by inserting a toothpick in the center of the dish the way you would for a cake because the toothpick will come out wet even when it is done.
The brownie pudding is done when the sides have set, puffed up and started to pull slightly away from the dish.
There will be a thin, crackly, brownie like crust on the top of the dessert.
The center will be soft set and jiggly when you jostle it.

Storing Leftovers
If you have leftovers, let them cool completely to room temperature.
Wrap the baking dish tightly or transfer them to an air tight container.
Store in the fridge for up to 4 days.
Reheat the brownie pudding in the oven until warm or scoop individual portions into microwavable dishes and microwave it until warm.

- Make sure to grease the brownie pan liberally with butter.
- Don’t have a 2 quart oval casserole dish? A 9″ pie plate holds a similar volume though it is shallower and wider so check it for doneness at 40 minutes. You can also use a 9×12 casserole dish, again checking for doneness at 40 minutes.
- Don’t skip on the water bath. It helps the pudding cook evenly, the pudding stay moist, and prevents the sides from burning and the eggs from curdling.
