It’s more delicious than the kind in the jar but just as sweet and nostalgic while being surprisingly simple.

What is Fluff anyway?

Fluff is marshmallow creme or softer, spreadable marshmallows.

It’s the consistency of sticky peanut butter.

Ingredients

To make this you’ll need:

  • Egg Whites– Discard the yolks
  • Cream of tartar– It helps the egg whites hold their shape.
  • Vanilla– Real vanilla extract for the best flavor
  • Sugar– Granulated
  • Corn Syrup
  • Water

How to Make

Making marshmallow fluff is not as hard as you’d think.

Start by whipping the egg whites, vanilla, and cream of tartar together in a stand mixer fitted with the whisk attachment until stiff peaks form.

Then, bring the sugar, corn syrup, and water to a rolling boil, stirring so the sugar doesn’t burn.

Once it boils, turn the stand mixer on high and slowly and carefully pour in the sugar mixture, pouring it down the side of the bowl.

Keep mixing on high until the fluff becomes stiff and shiny.

As soon as it’s stiff and shiny it is done.

Storing

Scoop the homemade fluff into a mason jar or other tightly sealable container and store it at room temperature for up to 6 weeks.

Serving

Serve marshmallow fluff on:

  • peanut butter sandwiches
  • fruit kabobs
  • ice cream
  • spread on cookies

You can also use it to make cereal treats, as a filling or frosting on cakes or cupcakes, or other baked goods.

Tips and Tricks

  • Be careful handling the sugar mixture so you don’t burn yourself.
  • Pouring the sugar mixture down the sides of the mixing bowl helps make sure none of the egg mixture gets stuck on the sides.
  • You’ll be able to tell the marshmallow fluff is done when it is glossy and thick. It should gently hold its shape.

Ingredients

  • 3 large Egg Whites
  • 1/4 tsp Cream of Tarter
  • 1/2 tsp Vanilla extract
  • 1 cup Sugar
  • 1 cup Corn Syrup
  • 1/2 cup Water

Instructions

  • Start by adding your egg whites, vanilla, and cream of tartar to a stand mixer.
    3 large Egg Whites, 1/2 tsp Vanilla extract, 1/4 tsp Cream of Tarter
  • Mix on high until stiff peaks form.
  • In a sauce pan add your sugar, corn syrup, and water. Bring to a rolling boil.
    1 cup Sugar, 1 cup Corn Syrup, 1/2 cup Water
  • Turn your stand mixer on high and slowly add your sugar mixer. Pouring down the side of the bowl.
  • Mix on high until it becomes stiff and shiny! This is how you know it’s finished.
  • Store in a mason jar and enjoy. You will never buy store-bought again.
