Homemade Condensed Cream of Celery Soup

Replace canned condensed soup with homemade condensed cream of celery soup! This recipe will work on its own as soup if you thin it with extra milk or as a stand in for any canned cream of soup.

It’s an easy recipe that comes together with ingredients you likely have in your pantry and fridge.

And it works perfectly in any recipe that calls for cream of anything and is so yummy you can even enjoy it as soup if you add more milk or broth.

Ingredients

To make this you’ll need:

  • Butter– Unsalted 
  • Celery– Finely chopped
  • Flour– All purpose
  • Broth– Chicken or vegetable
  • Milk– I recommend whole or 2 percent over skim.
  • Salt and pepper– To taste

How to Make

You won’t believe how easy it is to make homemade condensed cream of celery soup!

To do it, melt the butter in a small saucepan over medium heat.

Then cook the celery and in the melted butter for 5 to 7 minutes or until soft.

Stir in the flour and cook it for about a minute, stirring constantly until the flour and butter form a golden paste-like consistency.

Then slow whisk in the the broth and milk.

Keep whisking until constantly the soup is smooth and thick or about 3 to 5 minutes.

Season the soup with salt and pepper to taste.

At this point, you can use the condensed soup immediately in any recipe or store it in the fridge for later use.

Storing

To store this, let it cool to room temperature.

Then transfer it to an airtight container and refrigerate it for up to 4 days.

  • This recipe yields 2 cups of condensed soup. Most standard cans hold about 1 1/4 cups.
  • If you want to enjoy this recipe as cream of celery soup, simply stir in extra milk or broth until the soup reaches your desired consistency.
  • You can use the same recipe substituting out other finely diced vegetables in place of the celery to make other condensed soups. This would work with cream of mushroom or cream of broccoli.

Ingredients

  • 2 tablespoons butter
  • 3/4 cup finely chopped celery
  • 2 tablespoons all-purpose flour
  • 3/4 cup chicken or vegetable broth
  • 1/2 cup milk
  • Salt and pepper to taste

Instructions

  • In a small saucepan, melt butter over medium heat. Add celery and cook for 5โ€“7 minutes, until soft.
