Homemade Condensed Cream of Celery Soup

Replace canned condensed soup with homemade condensed cream of celery soup! This recipe will work on its own as soup if you thin it with extra milk or as a stand in for any canned cream of soup.

Ingredients

  • 2 tablespoons butter
  • 3/4 cup finely chopped celery
  • 2 tablespoons all-purpose flour
  • 3/4 cup chicken or vegetable broth
  • 1/2 cup milk
  • Salt and pepper to taste

Instructions

  • In a small saucepan, melt butter over medium heat. Add celery and cook for 5–7 minutes, until soft.

  • Slowly whisk in broth and milk. Continue whisking until smooth and thickened, about 3–5 minutes.

  • Season with salt and pepper to taste. Use immediately or let cool and store in the fridge for up to 4 days.
