Why make the same old standby grilled cheese or quesadillas when you can jazz them up with some fresh flavors and textures?

That’s pretty much what these Greek gyro quesadillas are.

They take the concept of quesadillas with melted cheese and toppings but add some fresh Mediterranean flavor by making a few easy ingredient swaps and serving them with tzatziki sauce for dipping.

The result is a yummy quick dinner or lunch that you and your whole family will love.

Ingredients

To make these you’ll need:

  • Naan bread– The round kind. Can’t find it? Use Greek pitas instead.
  • Olive oil– To spread on the skillet.
  • Cheese– Shredded mozzarella and crumbled feta
  • Meat – We use chopped gyro meat, which we either make homemade or we buy ready made in bags at Costco.
  • Veggies– Diced tomatoes, chopped and pitted black olives, and diced red onion
  • Tzatziki sauce– We love this homemade  Greek Tzatziki Sauce to dunk these in.

How to Make

Greek gyro quesadillas are so easy and quick to make!

To put them together, start by using a pastry brush to spread out a bit of olive oil in a large skillet set over medium heat.

Add one of the naan breads to the center of the skillet.

Top the naan bread with some of the mozzarella sprinkled evenly out over the bread, followed by some of the feta.

Add a quarter of the meat, tomatoes, olives, and onions on top of the cheese layer.

Cook for 4-5 minutes, or until the cheese has melted.

Then, top the open faced quesadilla with more mozzarella and feta evenly out overtop.

Close the quesadilla with another slice of naan bread.

Carefully flip it over and continue cooking until the second layer of cheese has melted and the bottom’s golden brown and slightly crispy.

Transfer the cooked quesadilla to a waiting plate, and continue until all quesadillas have been made.

Serve warm with tzatziki sauce for dipping and enjoy!

Storing Leftovers

I don’t recommend planning to have leftovers of these quesadillas as they will get soggy in the fridge.

If you have leftover fillings, store them all individually in airtight containers in the fridge and use them to make Greek gyro quesadillas again within 3 days.

What to Serve with Greek Gyro Quesadillas

These make a full meal on their own but when you have hungry kids in the house, sides are always a must.

We like to serve these with:

Tips and Tricks

  • You can use Greek pitas instead of naan bread if you’d prefer.
  • Don’t have (or don’t like) Gyro meat? You can use chopped rotisserie chicken instead.
  • Depending on the size of the naan bread you’re using, you may have to adjust the amounts of ingredients used.
  • Using two spatulas to keep the quesadilla together when you flip it over.
