My boys aren’t big salad eaters, mainly because they believe salad is a few sad pieces of lettuce with some dressing.

Ho hum.

They will, however, happily eat this salad because it is the opposite of sad salad.

It’s loaded with tons of Mediterranean flavors and so much crunch.

Plus, it’s hearty enough to satisfy big appetites so it feels less like salad to them and more like dinner.

Ingredients

To make this you’ll need:

  • Gyro meat– I like to use my leftovers from my Homemade Gyros meat. You can use store bought though, if preferred.
  • Veggies– Roughly chopped romaine, halved grape tomatoes, kalamata olives, halved cucumber slices, diced red onion
  • Feta cheese– Crumbled
  • Pita chips– Crushed for garnish
  • Lemon wedges– For garnish
  • Tzatziki sauce– Try my Homemade Greek Tzatziki Sauce. You may need to thin out whatever tzatziki you use with a little milk.

How to Make

Add the cooled, chopped gyro meat, chopped romaine, tomatoes, olives, cucumbers, onions and feta to a large mixing bowl and toss it to combine.

Dish the salad out onto 4 serving plates.

Top each helping with crushed pita chips and serve with a lemon wedge on the side.

Finish the salads by spooning thinned tzatziki sauce over them.

Serve and enjoy!

Is gyro salad healthy?

This salad is loaded with tons of veggies so you can feel good about eating it.

Can I make this ahead of time?

You can make the gyro meat ahead of time!

In fact, I recommend it.

But I wouldn’t assemble the salad until you are ready to eat.

Storing Leftovers

I don’t recommend planning to have leftovers of this gyro salad recipe.

Salads don’t hold up well after they are assembled.
