German Fried Egg Cake (Spiegeleierkuchen)

German fried egg cake, also called spiegeleierkuchen, is a fun Easter dessert that your family will love. Fool everyone with this sweet sunny side up egg cake!

Have you ever heard of German fried egg cake? This playful cake looks exactly fried eggs, but in reality, it’s a sweet German chocolate cake with a creamy white chocolate frosting.

Apricot halves make the sweet egg yolks. Flecks of dark chocolate and lime zest stand in for the pepper and savory spices.

The result? A cake that’ll trick everyone but delight the taste buds!

Not just for Easter! Make this Fried Egg Cake for April Fool’s!

While I adore this cake for Easter, I also love it for April Fool’s Day. It’s fun to pull this cake out for breakfast and have your family cut into it to discover it’s not a tray of sunny side up eggs at all but a delicious cake!

How to Make German Fried Egg Cake

Start with your favorite box of German chocolate or plain chocolate cake mix and make the cake according to the directions on the box in an 8×8 square baking dish.

Once the cake has cooled, mix together the white chocolate instant pudding with a cup of milk and half a cup of sour cream. Whisk the icing until it is well combined and smooth.

Then spread the icing out over the completely cooled cake. Try to get it as smooth as possible so it really looks like egg whites.

Once you’ve smoothed on the icing, dry off the apricot halves. When they are dry, put the halves on the cake as shown.

Finish your fried egg cake by zesting a lime and dark chocolate and then sprinkling with sugar to season the eggs.

Tips and Tricks

Making German fried egg cake is easy. Follow these tips and tricks to make sure it turns out perfectly each time.

  • Use your favorite cake mix. I like German chocolate in this but you can use any cake mix you like or have on hand- including yellow or white.
  • To keep it a surprise dessert, bake it in an opaque baking dish instead of a glass one.
  • Don’t skip drying the apricots. If you don’t dry them, the juice will run into the frosting and it might separate. They also will not have the authentic look to truly sell your dessert.
