Copycat Dan Dan Noodles
Copycat Dan Dan noodles are an at home version of the beloved PF Chang’s dish. Fettuccine noodles get tossed with perfectly cooked ground chicken and tossed with a salty, slightly sweet sauce. Quick and easy for a weeknight dinner!

My family and I were so bummed the last time we ventured out to PF Chang’s.
Our favorite Dan Dan noodles were no longer listed on their menu.
While the company has said multiple times that they will still make the dish to order if asked, it no longer has the thick brown sauce we loved so much.
So I’ve tried recreate that luscious brown sauce in this copycat version of the original recipe.
And my boys say I’ve done a pretty good job in creating a spot on replica of the old version.
What are Dan Dan noodles?
Dan dan noodles are a popular Sichuan street food.
They consist of noodles topped with crispy fried ground pork or chicken, peanuts, and a slightly sweet, salty, and sometimes spicy sauce.
Ingredients
To make this you’ll need:
- Chicken broth– I recommend using low sodium chicken broth since this dish can be a touch salty.
- Cornstarch and water– To turn into a slurry and thicken the sauce
- Honey– To sweeten the sauce
- Hoisin sauce– This is a soybean based Chinese barbecue sauce. You can find it in the Asian foods section at your grocery store or order it online HERE.
- Soy sauce– Again go with low sodium soy sauce if you can.
- Sesame oil– You can find this in the Asian foods section or order it online HERE.
- Noodles– I used fettuccine noodles.
- Olive oil– Or another light colored oil
- Chicken– Ground chicken
- Salt and pepper– To taste
- Serving Accompaniments– Cucumber, bean sprouts, peanuts, and green onions
How to Make
Making this copycat PF Chang’s recipe is pretty easy!
Start by cooking the noodles according to the packaging.
While the noodles cook, make the sauce.
To do this whisk together the chicken broth, cornstarch slurry, honey, hoisin, soy sauce, and sesame oil in a large bowl and set it aside.
Then, heat the olive oil in a large skillet over medium heat.
When the oil is hot, add the chicken to the pan and season it with salt and pepper.
As the chicken cooks, break it up into smaller pieces.
When the chicken is cooked, add the chicken broth mixture to the pan and bring to a boil, allowing it to simmer for about 10 minutes or until the sauce reaches your desired thickness.
Serve chicken with sauce over noodles with cucumber, beansprouts, peanuts and scallions if desired.

Storing leftovers
Store leftovers in an airtight container in the fridge for up to 3 days.
Reheat it in the microwave.
Tips and Tricks
- You could substitute ground pork for the ground chicken.
- Some versions of this recipe are spicier. If you want to add a little more zip to this you could add ground Sichuan peppercorns or a tablespoon or two of Sriracha or chili paste.
- If you really want to go authentic, then you could try to use traditional Chinese wheat and egg noodles.

- 3 tbsp cornstarch + 3 tablespoons water
- 1/4 cup honey
- 1/4 cup hoisin
- 1/4 cup soy sauce
- 2 tbsp sesame oil
- 1/2 lb fettuccine noodles
- 1 tbsp olive oil
- 1 lb ground chicken
- salt and pepper to taste
- Cucumber for serving, optional
- bean sprouts for serving, optional
- peanuts for serving, optional
- green onions for serving, optional
Instructions
- In a large bowl, whisk together the chicken broth, cornstarch slurry, honey, hoisin, soy sauce, and sesame oil; set aside
- Cook noodles according to package directions, drain and set aside
- While noodles are cooking, heat the oil in a large skillet over medium heat, then add the chicken, season with salt and pepper, and cook, breaking it up into smaller pieces
- Add the chicken broth mixture to the pan and bring to a boil, allowing it to simmer about 10 minutes, or until desired thickness is reached (you can add some more cornstarch if you want it even thicker)
- Serve chicken with sauce over noodles with cucumber, beansprouts, peanuts and scallions if desired

I loved PF Changs original version, but I must say that this one was as close as anything I’ve ever had, especially since I can’t get it at Changs or Pei Wei any longer.
Made a few minor personal preference tweaks, but the flavors were excellent and spot on! Most importantly, my wife loved this dinner tonight!
