How to Make

This cookie butter delight is so easy to make!

Just pulse 12 ounces of the cookies in the bowl of a food processor fitted with the blade attachments until they’re coarse crumbs.

Then pour the melted butter into the cookie crumbs and process everything until the mixture is evenly combined.

Press the cookie mixture evenly into a 9×13″ baking dish to form a crust.

Spread the cheesecake filling evenly out overtop of the crust.

Tips and Tricks

  • It really helps to let the cheesecake filling come to room temperature before spreading it over the crust.
  • You can make this dessert a day ahead, which gives the layers plenty of time to chill and set before serving.
  • I don’t recommend leaving it at room temperature for more than 2 hours since the creamy filling needs to stay refrigerated.
