Chicken Cordon Bleu Foil Packets
Chicken cordon bleu foil packets are an easy way to turn the main course into a full meal. Chicken breasts gets wrapped in a foil pouch with potatoes, diced ham, seasonings, and cheese before being cooked to delicious perfection.
Foil packet dinners are the best!
Normally they are really easy to make.
And because they are cooked in foil, clean up’s a breeze!
Well friends these chicken cordon bleu foil packets are no different!
Super easy to make and clean up but even easier to enjoy with the blend of chicken, ham and melted Swiss cheese.
It’s a meal made in heaven and ready in just about half an hour.
What is chicken cordon bleu?
Chicken cordon bleu is a traditional Swiss dish that features thin chicken wrapped around sliced ham and Swiss cheese before being fried in fat.
It’s super delicious and my version has all the flavors in an easier to make, lower maintenance recipe.
Ingredients
To make these you’ll need:
- Chicken breasts– Boneless, skinless chicken breasts trimmed of fat and diced into equal sized pieces
- Potatoes– Little potatoes like new or baby potatoes cut in half
- Ham– Diced
- Oil– Canola or another light oil
- Seasoning– Seasoning salt, Italian seasoning, dry mustard, and black pepper
- Cheese– Shredded Swiss.
How to Make
You don’t need to be a master chef to make these easy chicken cordon bleu foil packets!
Just stir all of the ingredients, except the cheese, together in a large mixing bowl.
Then lay two large pieces of aluminum foil on top of each other on a flat surface.
Add 1/4 of the meat mixture into the center of the foil.
Fold the packet up, sealing it tightly.
Put the sealed packet on a large baking sheet.
Repeat to make three more foil packets.
Put the tray of foil packets into 375° for 30-35 minutes, just until the potatoes are fork tender.
Remove the pan from the oven.
Then carefully open each packet in the center, making sure to avoid the escaping hot steam and sprinkle the shredded cheese evenly out over the meat mixture in each packet.
Put everything back in the oven, baking just until the cheese has melted.
Serve warm and enjoy!
Storing leftovers
Store leftovers in an airtight container in the fridge for up to 3 days.
Reheat in a hot oven until warmed through or microwave in a microwave safe dish without foil until warm.
Tips and Tricks
- You can adjust the seasonings to suit your taste.
- Add more cheese if you like or sub gruyere for Swiss.
- You could skip the potatoes and serve this over cooked egg noodles, rice, or mashed potatoes instead.

- 18-20 little potatoes halved
- 1 cup diced ham
- 2 tbsp canola oil
- 1 tsp seasoning salt
- 1 tsp Italian seasoning
- 1/4 tsp dry mustard
- 1/4 tsp black pepper
- 1 cup shredded Swiss cheese
Instructions

- Lay two large pieces of aluminum foil on top of each other on a flat surface. Add 1/4 of the meat mixture into the center of the foil. Fold up and seal tightly. Transfer the packet to a large rimmed baking sheet. Repeat to make three more foil packets.
- Bake at 375° for 30-35 minutes, just until the potatoes are fork tender.
- Remove the pan from the oven. Carefully open each packet in the center, making sure to avoid the escaping hot steam. Sprinkle the shredded cheese evenly out over the meat mixture in each packet.1 cup shredded Swiss cheese
