Strawberry Margarita Poke Cake
This easy strawberry margarita poke cake has all the flavors of the classic cocktail in a delicious, easy to make cake. This simple poke cake recipe turns a box of cake mix into a special dessert that’s perfect for Cinco de Mayo or any Summer occasion.

This strawberry margarita poke cake combines both of those loves into one fabulous treat.

I’m a big fan of them and have made several very popular versions including this s’mores poke cake, a peaches and sweet cream poke cake, and a red, white, and blue poke cake.
They often combine a delicious blend or combination of classic flavors, but what exactly is a poke cake?
What Is A Poke Cake?
Basically a poke cake is a cake baked in a 9×13 casserole dish that is cooled and then holes are poke into the cake all over. This is typically done with the end of a wooden spoon or, depending on the recipe, a wooden skewer.
After that liquid like flavored syrups, jello or pudding, or condensed milk is poured evenly out overtop and allowed to soak into the cake making it extra moist.
A poke cake is finished off with a layer of ‘topping’ like whipped cream of frosting to seal in the moisture.
This margarita poke cake gives the flavors of the classic cocktail you love in crumbly cake form
Ingredients Needed
While it may seem complicated at first, poke cakes are incredibly easy to make and often require only a handful of ingredients. This margarita version is no different.
To make it, you’ll need:
- Cake Mix – A 15.25 ounce box of strawberry cake mix, your favorite variety, plus the added ingredients called for.
- Pudding – One 3.5 ounce box of instant vanilla pudding
- Milk – A cup of milk
- Margarita Mix – Strawberry flavored liquid margarita mix is recommended, but the traditional citrus flavor can also be used in it’s place.
- Whipped Topping – 8 ounces cool whip (or store brand), thawed
- Strawberries – 16 ounces fresh strawberries, chopped, plus more for garnish
- Lime – 1 tablespoon of fresh lime zest, plus slices of lime for garnish
Once you’ve gathered all your ingredients, you’re ready to get busy making this easy margarita poke cake.
How To Make
Making this boozy strawberry margarita poke cake is not difficult at all.
Start by preparing the cake mix according to the package instructions. Transfer the batter into a prepared 9×13 baking dish and bake according to the package instructions.
Carefully remove the cake from the oven and let it cool completely. When the cake has cooled, use the end of a wooden skewer to poke holes all over the cake.
Then pour half a cup of the strawberry margarita drink over the cake. The strawberry margarita drink will seep into the cake, making it so moist.
Then whisk together the pudding mix with the remaining half cup of strawberry margarita drink and milk until everything’s evenly incorporated and it’s thickened slightly.
Fold the whipped topping, strawberries, and zest into the mixture until evenly combined. Transfer the whipped topping mixture to the cake, and spread out in an even layer overtop.
Evenly arrange slices of strawberries and limes on top, then refrigerate the cake for an hour to allow it to set up.
Slice, serve, and enjoy!
Storing
Extra sliced of poke cake can be stored in an airtight container in the refrigerator for up to 3 days.
Alternatively, you could freeze slices in an airtight container for up to 3 months.
Can I Make This Cake With Alcohol?
To make this an adult margarita poke cake, replace the virgin margarita mixer with an alcohol infused version.
However, if you do that do NOT serve this cake to anyone under 21 since it will contain alcohol.
TIPS & TRICKS
- Have an issue with dairy milk? Use almond or oat milk to make the pudding mixture instead.
- Make sure you’re using a non alcoholic liquid margarita mix.
- Can’t find strawberry flavored margarita mix? No worries, substitute a traditional citrus flavored margarita mix in it’s place.
- Don’t skip the 1 hour chill time before serving the cake. The filling and topping need this time to firm up and set.

Easy Strawberry Margarita Poke Cake
Ingredients
- 1 15.25 oz box strawberry cake mix prepared as directed on package instructions
- 1 3.5 oz pkg instant vanilla pudding
- 1 cup milk
- 1 cup strawberry margarita mix divided
- 8 ounce tub whipped topping thawed
- 16 ounces strawberries chopped
- 1 tablespoon lime zest
- Lime slices and strawberry slices for garnish
Instructions
- Bake the cake according to package instructions. Carefully remove it from the oven and allow it to cool.1 15.25 oz box strawberry cake mix
- Poke holes evenly out over the surface of the cooled cake with a fork or wooden skewer. Pour a 1/2 cup of margarita mixer over the holes in the cake. Then let it rest for 5-10 minutes allowing it to soak up the liquid.1 cup strawberry margarita mix
- Mix together vanilla pudding mix with milk and the remaining 1/2 cup of margarita mixer, just until thickened. Fold in whipped topping with strawberries and lime zest.1 3.5 oz pkg instant vanilla pudding, 1 cup milk, 8 ounce tub whipped topping, 16 ounces strawberries, 1 tablespoon lime zest
- Spread this mixture evenly out on top of the cake. Then garnish with sliced limes and strawberry slices.Lime slices and strawberry slices
- Refrigerate for at least an hour, but up to two.
- Slice, serve, and enjoy!
