Easy Strawberry Margarita Poke Cake

This easy strawberry margarita poke cake has all the flavors of the classic cocktail in a delicious, easy to make cake. This simple poke cake recipe turns a box of cake mix into a special dessert that's perfect for Cinco de Mayo or any Summer occasion.

Ingredients

  • 1 15.25 oz box strawberry cake mix prepared as directed on package instructions
  • 1 3.5 oz pkg instant vanilla pudding
  • 1 cup milk
  • 1 cup strawberry margarita mix divided
  • 8 ounce tub whipped topping thawed
  • 16 ounces strawberries chopped
  • 1 tablespoon lime zest
  • Lime slices and strawberry slices for garnish

Instructions

  • Bake the cake according to package instructions. Carefully remove it from the oven and allow it to cool.
    1 15.25 oz box strawberry cake mix
  • Poke holes evenly out over the surface of the cooled cake with a fork or wooden skewer. Pour a 1/2 cup of margarita mixer over the holes in the cake. Then let it rest for 5-10 minutes allowing it to soak up the liquid.

  • Mix together vanilla pudding mix with milk and the remaining 1/2 cup of margarita mixer, just until thickened. Fold in whipped topping with strawberries and lime zest.

  • Spread this mixture evenly out on top of the cake. Then garnish with sliced limes and strawberry slices.

  • Refrigerate for at least an hour, but up to two.
  • Slice, serve, and enjoy!

Notes

  • Have an issue with dairy milk? Use almond or oat milk to make the pudding mixture instead.
  • Make sure you're using a non alcoholic liquid margarita mix.
  • Can't find strawberry flavored margarita mix? No worries, substitute a traditional citrus flavored margarita mix in it's place.
  • Don't skip the 1 hour chill time before serving the cake. The filling and topping need this time to firm up and set.
