It is hard to get my boys to eat their veggies.

They know they need to but they just don’t want to.

But bacon?

They’d eat that breakfast, lunch, and dinner if they could.

So when I slather warm bacon vinaigrette dressing onto a salad, it suddenly turns the greens into something they can’t get enough of.

And understandably so!

This vinaigrette is rich, bacon flavored goodness just begging to be served on every veggie you ever make and serve.

How to Make

If you can fry bacon, you can make this warm bacon vinaigrette dressing!

Start by cooking the chopped bacon piece in a skillet over medium heat, stirring often, until crispy.

Then, use a slotted spoon to transfer the cooked bacon pieces to a paper towel lined plate to drain.

Set aside the skillet, leaving all the delicious bacon drippings in it.

In a small bowl, whisk together the eggs and the sugar until they are well combined.

Once the eggs and sugar are combined, whisk the vinegar and water into the egg mixture.

Pour this mixture into the skillet with the bacon drippings.

Stir the cooked bacon back into the skillet until completely incorporated.

Cook the mixture over medium heat, whisking vigorously, until it comes to a boil.

As soon as it boils, immediately reduce the heat to a simmer.

Let the dressing simmer gently until the dressing has thickened to your liking.

Once it has thickened up, let the dressing cool significantly, then serve warm over salad greens.

Enjoy!

Tips and Tricks

  • Once the dressing is simmering, give it a careful taste to check for seasoning and season it with salt and pepper to your liking.
  • Stir vigorously when you are heating the egg mixture with the bacon bits and grease. If you don’t you’ll have bits of egg throughout the dressing.
  • You could add a clove or two of garlic for even more flavor.
