Tzatziki Chicken Salad

Instead of a mayonnaise based dressing, tender pieces of chicken get tossed with a refreshing Greek yogurt sauce.
It makes for a delicious sandwich or wrap filling or topping to a green salad.
What is tzatziki sauce?
Tzatziki sauce is a creamy Greek condiment or sauce made of strained yogurt, fresh herbs, and tangy lemon.
You can find it premade at the store or make homemade tzatziki sauce.
Ingredients
To make this you’ll need:
- Cucumber– A large one
- Greek yogurt– The fat content doesn’t matter but make sure you’re using plain Greek yogurt. Flavored Greek yogurt absolutely would not taste good in this!
- Garlic– Fresh clove peeled and minced
- Red onion– Halved, peeled, and diced
- Dill– Fresh chopped dill
- Rotisserie chicken– Diced
- Feta– Crumbled
- Salt and pepper– To taste
How to Make
Making the tzatziki chicken salad is pretty easy!
Start by peeling the cucumber then slice in half lengthwise and scrape out the seeds in the middle with a spoon.
Dice the cucumber and set it aside.
Then stir the yogurt, lemon juice, garlic, dill together with the diced chicken in a large bowl.
Season with salt and pepper, to taste.
Stir the cucumbers.
Serve and enjoy!
Storing Leftovers
Store leftovers in an airtight container in the fridge for up to 4 days.
Serving Suggestions
This is a lighter take on chicken salad that is delicious in sandwich or wrap or served over a bed of lettuce.
You could also serve this on sliced cucumber or in hallowed bell peppers pieces.
Tips and Tricks
- You can serve this immediately or cover it and chill it for up to 2 hours first to give the flavors a chance to come together.
- The most important part of making this is to make sure the Greek yogurt you are using is plain Greek yogurt. Any kind of flavored yogurt will not work.
- Omit the onions if you are not a fan.
