Tzatziki Chicken Salad
Tzatziki chicken salad turns the Greek condiment into a delicious addition to the classic sandwich filling. Fresh Mediterranean flavors get mixed with tender diced chicken, cucumber, feta and a tzatziki style yogurt sauce for a fresh take on classic chicken salad.

- 1 large cucumber
- 1 1/2 cups plain Greek yogurt
- 2 tbsp lemon juice
- 2 cloves garlic peeled & minced
- 1/2 red onion peeled & diced
- 1 1/2 tbsp fresh dill
- 4 cups diced rotisserie chicken
- 1/2 cup crumbled feta cheese
- salt and pepper to taste
Peel the cucumber then slice in half lengthwise. Using a spoon scrape out the seeds in the middle. Dice and set aside.

Add the yogurt, lemon juice, garlic, and dill to a large bowl and toss to evenly combine. Season with salt & pepper, to taste.

Add the cucumbers to the dressing and stir the remaining ingredients together to evenly combine.
1/2 red onion, 4 cups diced rotisserie chicken, 1/2 cup crumbled feta cheese
Serve and enjoy!
- You can serve this immediately or cover it and chill it for up to 2 hours first to give the flavors a chance to come together.
- The most important part of making this is to make sure the Greek yogurt you are using is plain Greek yogurt. Any kind of flavored yogurt will not work.
- Omit the onions if you are not a fan.
