One of our go to meals in the warmer weather is definitely a good chicken salad sandwich.
But we over do it just a tad at times.
So I look for new ways to serve up a good shredded chicken sandwich but with new and different flavors from traditional chicken salad.
These easy crock pot chicken Caesar sandwiches are perfect for that!
You get delicious pulled chicken infused with creamy Caesar dressing and added to fluffy rolls with refreshing, crisp lettuce.
And the Caesar chicken itself would make excellent filling for a chicken Caesar wrap too!
Ingredients
To make these sandwiches you’ll need:
- Chicken breasts– Boneless skinless chicken breasts
- Broth– Chicken broth
- Caesar dressing– Your favorite variety of creamy Caesar. Make sure you aren’t using the Caesar dressing that is more vinaigrette style.
- Parmesan cheese– Shredded
- Seasonings– Chopped fresh parsley, red pepper flakes, and salt and pepper
- Sandwich fixings– Romaine lettuce leaves and hamburger buns
How to Make
These Crock Pot chicken Caesar sandwiches are a snap!
To make the chicken, pour the chicken broth into the bowl of your slow cooker and then add the chicken breasts.
Cover the slow cooker and cook on low for 4-6 hours or until the chicken’s cooked through.
Remove the lid and transfer the cooked chicken to a cutting board.
Shred using two forks or a pair of meat claws.
Empty any liquid from the bowl of the slow cooker and transfer the chicken back to the empty bowl.
Stir in the dressing, half the cheese, parsley, pepper flakes, and salt and pepper to taste.
Cover the Crock Pot and cook another 30-45 minutes on high, stirring at least once during this time.
Top the bottoms of each bun with several leaves of lettuce.
Add an equal amount of the Caesar chicken to each bun so the chicken covers the buns.
Sprinkle the remaining cheese evenly out over all the buns.
Close the sandwiches with the top bun.
Serve immediately.
Enjoy!

My facebook post:
Y’all know about my crock pot aversion, so if I post something…lol…
Made this yesterday and we all thought it was quite tasty. Delicious!
My notes on it: Used 3 – 4 pounded out chk breast halves and 2 – 3 small boneless skinless thighs. A primo Caesar dressing from the refrigerated section near produce and for sure generous pepper as stated in recipe. Hoagie rolls from Sam’s are our favorite for this sort of thing too. Not just yer average hamburger bun. For you “purists”, you could make your own dressing too. Just don’t use Kraft or something from the condiment aisle, lol, go primo. This came out juicy and flavorful, not dried out, gooey, and too rich like that ummmm crack chicken trend of the recent decade. Annnnddd…I tweaked nothing else!!!! Will be a regular for us.
I’m happy to say that after 15 years of crock attempts, I now have 3 – 4 keepers. This is one of them. Lol. Not a dump and go girl. 😉
ENJOY!!!
So happy you found another keeper with our recipe! I’m not a dump & go girl either, lol. Here’s to hoping you find other recipes of ours you fall in love with just as easily!!
Do you reheat the chicken for sandwiches the next day, or do you serve them cold?
Also, do you think that I could freeze this?
Yes, you would reheat the chicken when serving the leftovers. You should be able to freeze it just fine in an airtight container. I’d plan on adding some extra sauce when you’re ready to thaw and use.
