Apple Cider Beef Stew (Slow Cooker Recipe)

Apple cider beef stew is the perfect stick to your ribs lunch or dinner to lift your spirits on the coldest days. This beef stew features a rich, robust base made up of beef broth, gravy, and tomato sauce with a sweet hint of apple cider to counter the savory, tender veggies and beef.

I know a lot of people think beef stew is only a cold weather dish.

And while I normally firmly believe that beef stew is something you can and should enjoy year round, there’s something about apple cider beef stew that just hits different in the colder months.

The hint of cozy warming spices and sweetness from the cider really gives this stew a warming vibe.

It’s one of those meals that warms you from the inside out, you know?

Because it has sweeter spin than its more traditional counter parts, there’s nothing quite like it when you need something to fill you up, warm you up, and cheer you up.

Ingredients

To make this you’ll need:

  • Beef– Stew beef, trimmed of excess fat and cut into cubes
  • Veggies– Thinly sliced carrots, frozen peas, and russet potatoes cut into 1/2 inch pieces
  • Seasoning mixes– A packet of onion soup seasoning mix and a packet of brown gravy mix
  • Tomato sauce– An 8 ounce can
  • Beef broth– You could use beef stock
  • Apple cider– Your favorite brand of apple cider. Don’t substitute apple juice. It won’t have the right flavor.
  • Slurry ingredients– Corn starch and water to thicken the stew

How to Make

Thanks to the slow cooker, this apple cider beef stew is effortless!

Just add everything to the bowl of a slow cooker but the cornstarch and water and give it a good stir to combine.

Cover and cook on low for 7-8 hours, or on high for 4 hours.

About 15 minutes prior to serving, whisk the cornstarch and water together in a small bowl to make a smooth slurry.

Stir the slurry into the stew, cover and cook an additional 15 minutes.

Give the stew a taste and season it with salt and pepper, to taste.

Ladle into bowls and serve with a slice of crusty bread.

Storing

Store any leftovers in an air tight container in the fridge for up to 4 days.

Reheat in the slow cooker or on the stove until warmed through or reheat individual servings in the microwave.

Keep in mind that you may need to thin the stew out a little when you reheat it with extra broth or cider.

Tips and Tricks

  • Make sure you cut the beef into roughly equal sized cubes. Do the same with the potatoes to make sure everything cooks evenly.
  • You can add other veggies to this if you like. Onions, celery, and mushrooms would all be yummy additions.
  • The stew will thicken more as it sits.

Ingredients

  • 1 1/2 lbs stew beef trimmed & cubed

  • 1 1/2 cups russet potatoes roughly cut into 1/2" chunks
  • 1 1 oz pkt onion soup seasoning mix
  • 1 1 oz pkt brown gravy mix
  • 1 8 oz can tomato sauce
  • 2 cups beef broth
  • 1 1/2 cups apple cider
  • 3 tbsp cornstarch
  • 1/3 cup cold water

Instructions

  • To the bowl of a slow cooker, add everything but the cornstarch and water. Stir to combine.

  • Cover and cook on low for 7-8 hours, or on high for 4 hours.
  • Add the cornstarch and water to a small bowl. Using a fork, stir the mixture until the slurry's smooth. 
    3 tbsp cornstarch, 1/3 cup cold water
  • Stir the slurry into the stew, cover and cook an additional 15 minutes.
  • Salt & pepper, to taste. Ladle into bowls and serve with a slice of crusty bread.
