Parmesan Truffle Fries With Garlic Aioli

They are the elegant relative of the cheese fries you know and love.

But even though they are for more refined tastes, they are easy to make.

If you’ve ever made homemade french fries, you can make these with no problem at all!

What do truffle fries taste like?

Truffle fries taste like regular fries but have an earthy, rich, mushroomy flavor from the truffle oil.

And truffle oil is very strong so a little goes a long way!

Ingredients

Let’s break this down into 2 sets of ingredients.

The first set is for the Parmesan truffle fries themselves. For the fries you’ll need:

  • Potatoes– Large russet potatoes scrubbed clean
  • Oil– For frying. Don’t use truffle oil for this, but whatever oil you have on hand to fry food with like vegetable or canola.
  • Truffle oil– You can find this in many grocery stores near the oils or buy it online here.
  • Salt– Flaked salt
  • Cheese– Grated Parmesan cheese. Use good cheese, avoiding the kind in the can, for the best flavor.
  • Parsley– Fresh parsley minced

For the garlic aioli you’ll need:

  • Mayonnaise– Real, full fat mayonnaise and not Miracle Whip or mayonnaise style dressing
  • Lemon– The juice from 1 lemon
  • Garlic– Fresh minced garlic cloves
  • Salt and freshly ground black pepper

How to Make Parmesan Truffle Fries

Making these Parmesan truffle fries with garlic aioli is not complicated at all.

To make the fries, cut the scrubbed potatoes thin French fries using a french fry cutter or a sharp knife.

Soak the cut fries in a large bowl of cold salted water for at least an hour but up to overnight.

When you are are ready to cook the fries, heat a large pot of oil to 300 degrees, checking the oil with a cooking thermometer.

While the oil heats, drain and rinse the fries.

Pat them dry.

Then add the fries to the hot oil and cook for about 5 minutes.

After 5 minutes, remove the fries from the oil to a paper towel lined baking sheet.

Meanwhile increase the heat of the oil to 350 F.

Once the oil heats up to 350, put the fries back in the oil for another 2-3 minutes or until the fries are golden brown.

Take the fries out and put them on a fresh paper towel lined baking sheet to drain.

After draining off the excess cooking oil but while the fries are still hot, put them on a serving plate and drizzle with truffle oil and sprinkle them with salt.

Gently toss the fries to combine.

Finish them with a sprinkle of parmesan and parsley over the fries.

Serve immediately with garlic aioli.

How to Make Garlic Aioli

Making the garlic aioli is so easy.

Just whisk together the mayo, lemon, garlic, salt and pepper until completely combined in a medium bowl.

Refrigerate until you are ready to use it.

Storing Leftovers

This is a dish best enjoyed fresh.

But if you have leftover fries, store them in an airtight container in the fridge for up to 3 days.

Reheat, frying them in 300 degree oil for a minute or two just until they warm through.

You can store leftover garlic aioli in an airtight container in the fridge for up to 2 days.

Why do I have to soak the fries in water?

Soaking fries in cold salted water draws out the extra starch in the potatoes.

This will give you crispier fries and help prevent a gummy texture.

Tips and Tricks

  • Don’t skip soaking the fries before you fry them. Soaking them is the key to the perfect crisp texture.
  • A litte truffle oil goes a long way. The flavor is very distinct and fairly strong so start with less than you think you would need, toss the fries, and give them a taste. If you want a stronger truffle flavor, add more.
  • Flaky salt or a finishing salt like Himalayan sea salt is definitely a better choice for these fries than standard table salt.

Ingredients

  • While the fries are still hot, transfer to a serving plate and drizzle with truffle oil, then sprinkle with salt and toss to combine. Sprinkle parmesan and parsley over the fries and enjoy immediately with garlic aioli.
