Well this dessert makes it so I can have all three without being forced to make such difficult decisions.
It has a decadent layer of fudgy brownies and the creamiest dreamiest cheesecake.
Plus the whole thing is dotted with Oreos.
What more could you ask for?
Ingredients
Let’s break the ingredients down into two parts: the brownies and the cheesecake.
For the brownie layer you need:
- Flour– All purpose flour works best.
- Cocoa powder– Use a good quality cocoa powder.
- Eggs– Let them come to room temperature.
- Sugar– Plain, granulated sugar.
- Butter– Go for unsalted butter.
- Chocolate chips– I recommend semi-sweet but you could use milk or dark if you prefer. Just be aware the taste will change slightly.
- Salt– To balance the sweetness.
- Oreos
For the cheesecake layer you’ll need:
- Cream cheese– Use real, full fat cream cheese. Let it come to room temperature.
- Egg– Again, let it come to room temperature.
- Vanilla extract– Real vanilla extract is best. Avoid imitation vanilla.
- Sugar– Use regular granulated sugar.
- Oreos– Crush them for the cheesecake layer.
How to Make
These yummy dessert bars are easy to make if you take it step by step.
Start by preheating the oven to 350°F and lining a 9-inch square pan with aluminum foil or parchment paper. Set it aside.
Then, in a large microwave-safe bowl, melt the chocolate and butter in 20-30 second intervals, stirring after each one. Repeat this until the butter and chocolate are smooth.
Let the chocolate mixture cool slightly.
Next, in a medium bowl, combine the flour, cocoa powder, and salt.
Whisk the sugar into the melted chocolate until combined.
Once the sugar and chocolate are combined, whisk in the eggs and vanilla.

Set the brownie batter aside while you put together the cheesecake.
For the cheesecake layer, beat the cream cheese until fluffy with a hand mixer.
Then, beat in the sugar, egg, and vanilla until smooth.
Assemble the bars by pouring the brownie batter into the prepared pan and smoothing the top.
Then press the Oreo cookies gently into the batter.
Once you’ve spread the Oreos onto the brownie batter, pour cheesecake mixture all over the top.
Then sprinkle the cheesecake layer with crushed cookies.
Bake for 35-40 minutes or until the edges are slightly golden.
When the edges are slightly golden, let it cool on a wire rack.
Refrigerate for at least 1 hour before serving.

Storing the Bars
If you think these will last more than a day or so in your house, I don’t recommend storing them at room temperature.
Instead, I recommend storing the bars tightly wrapped with a double layer of aluminum foil and plastic wrap in the fridge.
They’ll last about a week in the fridge.
For longer storing, you could also wrap them tightly and put them in the freezer.
In the freezer, these cheesecake brownies will last between 1 and 2 months.
Tips and Tricks
- Make sure to melt the chocolate and butter for the brownie layer in increments to prevent burning the chocolate. If you burn the chocolate, you will need to discard it and start over.
- Don’t overmix the brownie batter when you stir in the dry ingredients. Overmixing could create a tough brownie.
- You could vary your cookies in this recipe and do half Oreos, half chocolate chips. Whatever you like!

- 6 Oreo cookies crushed
Instructions
- Preheat oven to 350°F. Line a 9-inch square pan with aluminum foil or parchment paper. Set aside.
