Ingredients
To make this you’ll need:

- Gingersnap crumbs– For the crust. You can use graham crackers or nilla wafers if you can’t find gingersnaps spiced up with some ground ginger and cinnamon.
- Gingerbread man cookies– You can buy premade small gingerbread man from Pepperidge Farms this time of year.
- Butter– Melted
- Cream cheese– Full fat cream cheese or Neufchรขtel for a lighter version. Let it soften to room temperature.
- Sugar– Granulated
- Spices– Ground ginger, ground all spice, cinnamon. If you don’t want to use or don’t have all spice, use extra cinnamon and some nutmeg.
- Vanilla extract– The real kind has the best flavor
- Molasses– This gives it the signature earthy caramel flavor. You can substitute dark corn syrup or maple syrup but the flavor will change.
- Heavy cream– Do not substitute for lower fat cream.
- Toppings– Whipped cream and more gingerbread cookies.
How to Make
This no bake gingerbread cheesecake will leave you plenty of time for merry making since it’s so easy to make!
Just mix your gingersnap crumbs and butter together and press the crumbs into the bottom and slightly up the side of an 8-9 inch springform pan.

Line the edge of the pan with gingerbread men, standing up against the sides as “crust.”
Set the springform pan aside while you make the filling.
To make the filling ,whip the cream cheese, sugar, ginger, all spice, cinnamon, vanilla and molasses together until it’s fluffy with a hand mixer in a large mixing bowl.

Whip the heavy cream into the cream cheese mixture.
Pour the filling into the pan.
