With their appetites, I get it.
But it does make getting a variety of flavors on the table kind of tough and I find myself relying on standards like meatloaf and mashed potatoes.
This Mississippi meatloaf recipe is a tasty variation that makes everyone in our house happy.
The boys love the hearty main dish and I’m happy that it’s full of flavors you wouldn’t get in a traditional meatloaf thanks to ranch seasoning and briny, zippy pepperoncini juice.
It’s a delicious combination of Baked Mississippi Chicken and Mississippi Pot Roast Stew mashed up with meatloaf.
Ingredients
To make this you’ll need:
- Ground beef– Use leaner ground beef so it doesn’t cook down too much and get too greasy.
- Breadcrumbs– Italian style
- Milk– To keep the meatloaf moist.
- Pepperoncini juice– Right from the jar of pepperoncini
- Eggs
- Gravy mix– The kind in a packet
- Ranch seasoning– The kind in a packet
- Gravy ingredients– Water, pepperoncini juice, a packet of both ranch seasoning and gravy mix, cornstarch and pepperoncini
How to Make
Making this Mississippi meatloaf is pretty easy to do!
Start by making the gravy.
To make the gravy, whisk the water, pepperoncini juice, gravy mix, ranch mix, cornstarch, and pepperoncini peppers together in a medium sauce pan.
Bring the mixture to a boil, and then turn the heat down to a simmer.
Stir the gravy frequently until it thickens.
Keep the gravy on the lowest setting, stirring occasionally, while the meatloaf cooks.
To make the meatloaf, combine the he ground beef, breadcrumbs, milk, pepperoncini juice, eggs, gravy mix and ranch mix together in a large bowl.
Shape the mixture into a loaf shape on a baking sheet you’ve lined with tin foil.
Spread ¼ cup of gravy over the meatloaf.
Then bake the meatloaf in the a 350 degree oven for 50-60 minutes, or until completely cooked through.
Pour more gravy on top of the cooked meatloaf, and serve the extra gravy on the side.

- Don’t skip the milk in the meatloaf. It tenderizes the ground beef.
- You don’t need to cover the meatloaf when you are cooking it. Letting it cook uncovered will help the gravy thicken up and caramelize on the meatloaf.

For The Gravy
- 2 cups water
- ¼ cup pepperoncini juice
- 1 packet gravy mix
- 1 packet ranch mix
- 1 tablespoon cornstarch
- 6-8 pepperoncini peppers
Instructions
To Make The Gravy

- Preheat the oven to 350 F. Line a baking sheet with tin foil and set aside.

- Shape into a loaf on the prepared baking sheet.
- Spread ¼ cup of gravy over the surface of the meatloaf, then bake in the preheated oven for 50-60 minutes, or until completely cooked through (165 F)
- Pour more gravy on top of the cooked meatloaf, and serve the extra gravy on the side.
