Marinated Cheese Appetizer

A marinated cheese appetizer is an easy way to start any party or gathering! These marinated cheese cubes put a southern spin on the appetizer by adding zingy, briny pimento peppers to the mix of herbs, oil, and vinegar.

Most people think that means tons of work, but I’m here to set the record straight.

You can save yourself some serious time and energy by making easy snacks for guests to enjoy instead of time and labor intensive appetizers.

For example this marinated cheese tray takes only 10 minutes to put together and doesn’t skimp on taste or elegance.

Ingredients

To make this, you’ll need:

  • Cheeses– Cheddar, pepper jack, and cream cheese. Cut each type of cheese into 30 1/2″ cubes or slices
  • Olive oil– Don’t substitute a different kind of oil. You want the flavor from the olive oil for this.
  • Vinegar– White wine vinegar
  • Fresh herbs– Minced fresh parsley, basil, and green onion
  • Garlic– Fresh cloves minced or pressed
  • Pimentos – A jar of them, drained.
  • Spices– Salt and crushed red pepper flakes

How to Make

Arrange the cheese slices in a repeating pattern in a large casserole dish until you have used them all.

Set aside the dish while you make the marinade.

To make the marinade, add the olive oil, white wine vinegar, parsley, basil, garlic, green onion, pimentos, salt, and red pepper flakes to a mason jar or small bowl and shake or whisk to completely mix together.

Then, pour the oil and vinegar mixture over the cheese, making sure all the pieces get some of the fresh herbs on top.

Cover with plastic wrap.

Let the cheese marinate in the fridge at least two hours.

Serve with crackers, bread, or baguette pieces.

Storing leftovers

Store leftovers tightly wrapped in the fridge for up to 3 days.

What should I serve with marinated cheese?

You can serve this marinated cheese appetizer with pieces of baguette, crackers, or bread.

It’s also a fantastic base for an antipasto style spread.

If you want to do that, you can add the following to your spread or table:

  • different varieties of olives
  • marinated or pickled Italian veggies
  • nuts

  • You can mix and match your cheeses so you are using your favorite varieties.
  • If you don’t want the cheese to have a little kick, skip the crushed red pepper flakes and consider subbing the pepper jack for a milder variety like monterey jack.
  • Using fresh herbs is the way to go here. They will give you a better flavor and presentation.

Ingredients

  • 8 oz block cheddar cheese cut into thirty ½” slices
  • 8 oz block pepper jack cheese cut into thirty ½” slices
  • 8 oz block cream cheese cut into thirty ½” slices
  • 1/2 cup olive oil
  • 1/2 cup white wine vinegar
  • 1/4 cup minced parsley
  • 1 tbsp minced fresh basil
  • 2 cloves garlic minced
  • 1 green onion minced
  • 1 2 oz jar diced pimentos drained
  • 1/2 tsp salt
  • 1/4 tsp crushed red pepper flakes

Instructions

  • Arrange the cheese slices in a repeating pattern in a large casserole dish until they are all used up; set aside
