Easy Shrimp Ceviche (Costco Copycat)

Easy shrimp ceviche is the perfect Costco copycat recipe to make all summer long. With sweet shrimp marinated in lime juice and tossed with fresh veggies and herbs, this citrusy seafood dish is a delicious appetizer or main course.

Costco is one of my happy places.

Strange but true.

I just love all the samples and of course the yummy prepared foods.

One of my favorite things to grab when I go to Costco is their shrimp ceviche.

It’s so fresh and limey and delicious.

Though I swing by the prepared food section each time I go to Costco, they don’t always stock this.

So I decided to make my own so I can enjoy it any time.

What is shrimp ceviche?

Ceviche is a South American seafood dish featuring fresh, raw fished “cooked” in lime juice.

It typically has other flavors and veggies tossed with it.

Traditional shrimp ceviche uses raw shrimp that’s allowed to marinate in the citrus juices.

The acidity cooks the shrimp, making it safe for eating.

Is Costco shrimp ceviche cooked?

Yes.

Though traditional recipes use raw shrimp, Costco’s uses cooked shrimp.

Since I’m doing a copycat recipe, I decided to use cooked shrimp just like Costco does.

Ingredients

To make this copycat Costco recipe, you’ll need:

  • Shrimp– precooked peeled and deveined shrimp with the tails removed
  • Lime juice– Fresh is best, but bottled will work too
  • Veggies- Seeded and diced tomato and yellow bell pepper, diced red onion, and diced avocado
  • Cilantro– Finely chopped
  • Salt and pepper– To taste

Costco doesn’t add avocado to their shrimp ceviche; however, it’s an essential addition for us. You can omit it to be as close to the original as possible, or include it- the choice is up to you!

How to Make

To make this, toss the shrimp and the lime juice together in a large mixing bowl and let the shrimp marinate for 10 to 15 minutes.

Then, stir in the cilantro and all of the veggies except the avocado.

Season with salt and pepper to taste.

Just before you are ready to serve, stir in the diced avocado.

Enjoy!

How to Serve Shrimp Ceviche

We often have this over a bed of fresh greens and use it as a salad.

However, we also enjoy this:

  • as a dip with plantain chips or tortilla chips
  • in tacos or burritos
  • on pieces of toasted baguettes

How long is Costco Shrimp Ceviche good for?

The shelf life on seafood dishes like this is fairly short. 

It will last in an air tight container in the fridge for 2 days.

Tips and Tricks

  • We leave the shrimp whole, but you can chop them if you want more shrimp in every bite. I highly recommend this if using this as a dip or salsa.
  • If you’d prefer to make a more traditional ceviche using raw shrimp, let the shrimp marinate (refrigerated) in the lime juice for 1 1/2- 2 hours, until the shrimp’s turned pink and opaque after the citrus juice has “cooked” it.
  • Do NOT drain the juices from the shrimp. You want all that yummy citrus in your ceviche.
  • You can add other seafoods like scallops, calamari, mussels, or crab to this simple salad for a delicious mix.

Ingredients

  • 1 lb cooked shrimp peeled, deveined, tails off
  • 3/4 cup fresh lime juice
  • 1 large tomato seeded & diced
  • 1 yellow pepper seeded & diced
  • 1/2 cup diced red onion
  • 1/2 cup finely chopped cilantro leaves
  • 1 large avocado peeled & diced (prep this last)
  • salt & pepper to taste

Instructions

  • Add the shrimp and lime juice to a large mixing bowl. Toss to combine, and let marinate for 10-15 minutes.
  • Add all of the vegetables EXCEPT the avocado to the mixing bowl. Stir to evenly combine.
  • Season with salt & pepper, to taste.
  • Stir in the diced avocado just before serving- prepping & adding this last will prevent browning.
  • Serve with tortilla chips, or use as a dip or salsa for Tex Mex dishes.
