Lucky Charms Pancakes

Lucky Charms pancakes are a magically delicious breakfast treat for St. Patrick’s Day. Pancake mix gets dressed up with the festive cereal, white chocolate, and sprinkles for the holiday!

Ever since the boys were little, I’ve loved making a big deal about all the holidays.

I lean really hard into St. Paddy’s Day and make traditional Irish fare like Slow Cooker Corned Beef Hash.

But I also love the fun leprechaun and rainbow inspired treats geared more for kids like these Lucky Charm pancakes.

Since they use store bought pancake mix, it’s an easy way to get the day off to a magical start to delight your kiddos.

Ingredients

To make these festive St. Patrick’s Day pancakes you’ll need:

  • Pancake mix– I recommend Krusteaz brand, but you could use whatever brand you like.
  • Water
  • Lucky Charms– The cereal and not just the marshmallows!
  • Butter– For the skillet
  • Toppings– Optional, but white chocolate melts and rainbow sprinkles really up the wow factor here!

How to Make

Lucky Charms pancakes are as easy to throw together as any store bought pancake mix!

To do it, whisk the pancake mix and water together in a mixing bowl just until they are evenly combined.

Then, stir in the cereal.

Next, melt one tablespoon of butter in a skillet set over medium low heat.

When the butter is melted, scoop 1/3 cup of batter into the hot buttered pan to make the first pancake.

Let it cook until bubbles start to appear on the surface of the pancake.

Then, carefully flip the pancake over with a nonstick spatula and cook it for about 2 more minutes or just until the pancake is cooked through.

Put the cooked pancake on a waiting plate and repeat this until you’ve cooked all the pancakes, adding the remaining butter to the skillet when you’ve used half the batter.

If you’re using it, melt the chocolate melts according to the directions on the package and drizzle it over the stack of pancakes.

Top with sprinkles.

Serve and enjoy!

Storing Leftovers

Pancakes are one of those foods best enjoyed right when you make them.

However, if you do have leftovers wrap them tightly in plastic wrap or foil and store them in the fridge for up to 2 days.

Reheat them in a buttered skillet on the stove until warmed through.

Tips and Tricks

  • Don’t overmix the pancake batter! It will not be completely smooth and that is totally fine!
  • Not sure if your skillet is hot enough? After the butter melts, add a drop or two of water to the skillet. If the water dances and sizzles, the skillet is hot enough.
  • Make sure to add the last pat of butter halfway through cooking!

Ingredients

  • 2 cups pancake mix Krusteaz brand recommended
  • 1 1/3 cups water
  • 1 - 1 1/2 cups Lucky Charms cereal
  • 2 tbsp butter
  • white chocolate melts optional
  • sprinkles optional

Instructions

  • Add the pancake mix and water to a mixing bowl, and whisk them together just until evenly combined. Do NOT overmix.
    2 cups pancake mix, 1 1/3 cups water
  • Add the cereal to the bowl, stirring just until evenly incorporated.
    1 - 1 1/2 cups Lucky Charms cereal
  • Add 1 tablespoon of butter to a skillet set over medium low heat and melt. Pour 1/3 cup of batter onto the hot buttered skillet. Cook until bubbles start to appear on the surface.
    2 tbsp butter
  • Using a nonstick spatula carefully, and quickly, flip the pancake over. Continue cooking for about 2 more minutes- just until the pancake's cooked through and the bottom's slightly golden brown. Transfer to a waiting plate.
  • Continue cooking until all the pancakes are cooked, adding the remaining butter to the skillet halfway through.
  • If using, melt the chocolate according to the package directions. Pour over the stack of pancakes, then top with sprinkles.

Notes
