What are chocolate turtles?
Turtles are candies that feature pecan halves layered with soft, gooey caramels and coated with rich melted chocolate.
Why are they called turtles?
Because they look sort of like candy turtles!
When Johnson’s Candy Company originally created turtles in 1918, a salesman saw one and exclaimed over the treat’s resemblance to the shelled creature.
Ingredients
To make this you’ll need:
- Chocolate– A bag of melting chocolate
- Pecans– Halves not crushed pecans or pecan pieces.
- Caramels– Soft caramel candies
- Heavy cream– Don’t substitute for a lower fat dairy
How to Make
To make this homemade turtles recipe, start by arranging the pecan halves in an x shape on a parchment lined baking sheet.
Then, melt the chocolate in a pan over low heat or in the microwave by zapping it in 30 second intervals, stirring after each increment until the chocolate is just smooth.
Once the chocolate is melted, set it asid while you melt the caramel with the heavy cream in a pan over low heat or in the microwave in 30 second intervals.
Stir the caramel and cream well so it is smoothly combined.
Spoon the caramel mixture to the center of each pecan cluster and then top each with a generous spoonful of melted chocolate.
Put the candy filled baking sheet in the fridge to set for 20 minutes.

How to Store Homemade Turtle Candy
For best results, store homemade turtles in a single layer in an airtight container in the fridge or in a cool room for 2 to 3 weeks.
If storing more than one layer of candies in a container, separate the layers with a piece of parchment paper.

- If the hot caramel gets too difficult to work with you can reheat it to melt it again.
- To keep the chocolate at a good temperature, place the container or bowl with the melted chocolate in it over a bowl full of hot water.

- 1 tbsp heavy cream

- Melt the caramel with the heavy cream in a pan over low heat, or in the microwave in 30 second intervals, stir well to combine1 bag soft caramels, 1 tbsp heavy cream
- Add the caramel mixture to the center of each pecan cluster (if the hot caramel gets too difficult to work with you can reheat it to melt it again)
- Top each turtle with a generous scoop of melted chocolate
- Place turtles into the fridge to firm up for about 20 minutes
