As a busy mom, I need the easiest recipes you can possibly make.

You know, too many irons in the fire and all that.

Well what’s easier and more versatile than a good pasta salad?

Possibly nothing.

And this Doritos taco pasta salad is a bold flavorful mashup of your favorite taco meat, pasta salad, and the addicting chip.

It’s perfect for potlucks and picnics or even as a quick summer dinner.

And it’s a fun dish to serve for Cinco de Mayo along with favorites like Mexican Street Corn Salad or Mexican Rice.

Ingredients

To make this you’ll need:

  • Ground beef– Cooked, crumbled, and drained
  • Pasta– Preferably bowties but penne or elbows would work as well. Cook it according to the package directions.
  • Taco seasoning– Your favorite kind
  • Veggies– Halved grape tomatoes, sliced green onions, and shredded iceberg lettuce
  • Cheese– Shredded or cubed pepper jack or cheddar
  • French dressing– Again your favorite kind
  • Doritos– I recommend Nacho Cheese, but you could use Cool Ranch or a different kind if you prefer. Crush them.

How to Make  

Doritos taco pasta salad is so easy to make!

Just toss together the cooked and drained ground beef and taco seasoning until evenly combined.

Then stir together the seasoned beef, pasta, onions, tomatoes, cheese, and lettuce in a large mixing bowl.

Stir in the dressing until it coats everything evenly.

Toss with the crushed chips.

Serve immediately, or refrigerate until chilled and then serve.

Storing Leftovers

Store leftovers in an airtight container in the fridge for up to 3 days.

Keep in mind the longer you store it the less crunchy the chips will be and the more the lettuce will wilt.

Tips and Tricks

  • For an even zestier kick you could add in a can of pickled jalapenos.
  • You could also stir in some cilantro for added freshness.
  • Not a fan of French dressing? Substitute Thousand Island or even ranch.

Ingredients

  • 1 lb ground beef, cooked, crumbled, & drained
  • 1 lb bowtie shaped pasta, cooked, drained, and rinsed with cold water to stop cooking
  • 3 tbsp taco seasoning
  • 1 small bunch green onions, thinly sliced
  • 1 pint grape tomatoes, halved lengthwise
  • 2 cups shredded, or cubed, pepper jack cheese
  • 3 cups shredded iceberg lettuce
  • 1 1/2 cups French dressing
  • 2-3 cups crushed Doritos

Instructions

  • Toss together the ground beef and taco seasoning until evenly combined.
    1 lb ground beef, cooked, crumbled, & drained, 3 tbsp taco seasoning
  • To a large mixing bowl, add the seasoned beef, pasta, onions, tomatoes, cheese, and lettuce- stirring until evenly mixed.

  • Stir in the dressing until everything's evenly coated. Add the chips, and toss to combine.
    1 1/2 cups French dressing, 2-3 cups crushed Doritos
  • Serve immediately, or refrigerate until chilled and then serve.

Notes
