Cherry Cheesecake Popsicles
Cherry cheesecake popsicles are a creamy frozen treat full of delicious summer flavors. These yummy ice pops will be a hit after a day outside swimming or running through the sprinkler.

Cheesecake is one of my favorite indulgences.
I love it so much I could practically be the 5th Golden Girl.
And my boys adore it too.
Instead of the heavy cheesecakes, these cheesecake popsicles lighten things up a touch.
They don’t skimp on the creamy cheesecake flavor but include a delicious homemade cherry puree and let you control how much sugar you want to use.
The result? A gourmet popsicle you’ll love enjoying right along with your kids on the next hot day!
Ingredients
To make this popsicle recipe, you’ll need:
- Graham cracker crumbs– The precrushed ones make this recipe easier but you could always make your own graham cracker crumbs. You could also sub Golden Oreo crumbs or another cookie crumb instead.
- Melted butter– A little bit of melted butter will help create a “crust” for the popsicles with the graham cracker crumbs.
- Cherries– Use pitted, dark sweet cherries instead of more tart varieties.
- Water– To thin the popsicle mixture just a little.
- Sugar– Granulated sugar works best.
- Cream cheese– Full fat for the best flavor.
- Milk– To thin the cream cheese.
How to Make
Making this refreshing dessert is pretty simple.
To do it, mix the graham cracker crumbs with the melted butter in a small bowl and set them aside.
Then add some of pitted cherries, water and and a portion of the sugar to a blender and puree until the mix is smooth. Pour the mix into a liquid measuring cup or bowl and rinse the blender.
Add cream cheese, milk and remaining sugar to the rinsed blender and blend the mixture until smooth.
Divide the cream cheese mixture in half. Then, add the puréed cherries to one half of the mixture to make the cherry cream cheese mix.
Slice the remaining cherries in half and layer them into the popsicle molds, filling the molds no more than one third of the way up.
Then pour the plain cream cheese mix onto the sliced cherries. The mix will fill in around the cherries.
Now add the the the cherry cream cheese mixture to the second third of the popsicle molds.
Top with graham cracker mixture and gently press into the mold. Then, cover the popsicle mold and insert the popsicles sticks.
Freeze for at least 8 hours, or overnight.
Enjoy!
Serving and Storing
Store the popsicles in the molds. They should last for several months.
To serve, run the popsicle mold under warm water for a 5-10 seconds to easily release the popsicle.
Tips and Tricks
- If you would like the popsicles to be more sweet, add sugar one extra tablespoon at a time until the mix is to your liking.
- To reduce the amount of sugar, sweeten each component one tablespoon at a time, tasting after each addition until the mixture is to your liking.
- You can substitute the graham cracker crumbs for other types of cookies like Golden Oreos, BelVita cookies, gingersnaps, shortbread cookies, Nilla wafers, etc.
- Not a fan of cherries or can’t find them in the store? Feel free to substitute other fruits like berries, peaches or mangoes.
- Use ripe fruit for the best flavor.
- These pops melt pretty fast so only remove from the freezer when ready to serve.

Cherry Cheesecake Popsicles
Ingredients
- 1 cup graham cracker crumbs
- 3 tbsp melted butter
- 2 cups pitted sweet dark cherries divided
- 2 tbsp water
- 1/2 cup sugar divided
- 1 8 oz pkg cream cheese
- 1 cup milk
Instructions
- In a small bowl, mix the cookie crumbs with the melted butter. Set aside
- To a blender, add 1½ cups pitted cherries, water and 2 tbsp sugar. Blender until pureed. Rinse the blender
- To the blender, add cream cheese, milk and remaining 6 tbsp of sugar. Blend until smooth.
- Divide the mixture in 2, and mix one half with the puréed cherries to make the cherry cream cheese mix.
- Slice the remaining ½ cup cherries in half.
- In half of the molds, put cherry slices and fill up with plain cream cheese mix. Fill up the other half of the molds with cherry cream cheese mix.
- Fill up popsicle molds with cream cheese and fruit mix only 2/3rds of the way.
- Top with cookie mixture and gently press into the mold.
- Cover the popsicle mold and insert the popsicles sticks
- Freeze for at least 8 hours, or overnight.
- To serve, run popsicle mold under warm water for a 5-10 seconds to easily remove the popsicles
Notes
- If you would like the popsicles to be more or less sweet, add or reduce the sugar, 1 tbsp at a time, to your liking.
