Baked Mississippi Chicken
Baked Mississippi chicken is an addictingly delicious way to serve up a winner of a chicken dinner. This recipe features buttery chicken breasts seasoned with ranch, au jus mix, pepperoncini’s and baked to tender perfection!
We eat so much chicken in this household.
It’s always a challenge coming up with ways to keep the staple ingredient interesting.
But baked Mississippi chicken does just that with only 5 ingredients to boot!
And the result is a zesty chicken dish with a bold blend of ranch flavor and briny pepperoncini that you can have on the table in half an hour!
What is Mississippi chicken?
Mississippi chicken is a spin on the classic Mississippi pot roast, which is pot roast cooked with butter, ranch seasoning, au jus seasoning, and pepperoncini.
Like the pot roast version, this chicken takes on all those big flavors for a dish that is finger licking good.
Ingredients
To make this you’ll need:
- Boneless, skinless chicken breasts– You could also substitute tenderloins or chicken thighs though you may need to adjust how long you cook the chicken for.
- Ranch seasoning– The dry ranch seasoning that comes in the packets
- Au jus gravy mix– Your favorite brand
- Pepperoncini peppers– Can’t find them or don’t have them? Substitute banana pepper slices.
- Butter– Make sure you use unsalted butter since both the ranch and au jus mixes are very salty.
How to Make
Baked Mississippi chicken is so easy!
To make it pat the chicken breasts dry with paper towels and then put them in a row in a 9×13 baking dish you’ve sprayed with non stick spray.
Sprinkle both the ranch seasoning and au jus powder evenly out over the chicken.
Then, spread the peppers evenly out over top of the seasoned chicken.
Top the chicken with pats of butter evenly out overtop.
Bake at 425° for 25-30 minutes, or just until the chicken’s cooked through and reaches an internal temperature of 165 degrees.
Serve warm and enjoy!
Serving Suggestions
You can pair this with any side dish you like but it pairs particularly well with:
- mashed potatoes
- steamed white rice
- egg noodles
Storing Leftovers
Store leftovers in an air tight container in the fridge for up to 4 days.
Reheat in the microwave or in a hot oven until warmed through.
How much ranch is in a store bought packet?
Dry ranch seasoning is one of the key flavor components in this recipe and you may want to substitute the store bought packet of seasoning with your own homemade dry ranch seasoning blend.
In that case, you’ll need to make at least an ounce of ranch seasoning or just shy of 3 tablespoons of seasoning.

Tips and Tricks
- Do NOT use salted butter for this recipe since both the ranch and au jus mixes are already very salty. Salted butter will make the recipe too salty.
- Trying to cut down on the salt content? Sub brown gravy mix for the au jus.
- Like things cheesy? Sprinkle shredded mozzarella cheese evenly out over the chicken before baking.
