Bacon Blue Cheese Guacamole
Ingredients
- 3 avocados
- 1/2 medium red onion, finely diced
- 1 small jalapeno, seeds removed and finely diced (optional)
- salt, to taste
- 1 lime
- 2 tbsp finely chopped cilantro
- 1/2 lb bacon, cooked, cooled, & crumbled
- 1/2 cup blue cheese crumbles
Instructions
- Cut the avocados in half. Remove the pit. Scoop the avocado into a medium sized mixing bowl.
- Mash the avocado, and stir until mostly smooth. Add the onion, jalapeno (if using), salt, cilantro, and cheese. Squeeze the lime juice into the bowl. Stir everything together until evenly incorporated.
- Stir in the bacon until the mixture's once again evenly mixed. Serve the guacamole/dip with crisp tortilla chips.
