Strawberry Rolls with Powdered Sugar Icing

Move over cinnamon rolls! These homemade strawberry rolls with powdered sugar icing take light and fluffy cinnamon roll dough and stuff it with sweet strawberry jam for a tasty breakfast treat you’ll love.

I love cinnamon rolls and like to enjoy them in so many ways like these cinnamon roll waffles!

There is just something about biting into a warm, sweet breakfast pastry that makes the day feel like it’s starting off right. But for me homemade cinnamon rolls taste like the holidays.

So when the sweet roll urge hits in the middle of summer when it’s nowhere near Christmas, I like to take classic cinnamon roll dough and fill it with a fruity filling to make it more seasonally appropriate.

THE DIFFERENCE BETWEEN SWEET ROLLS & CINNAMON ROLLS

Sweet rolls and cinnamon rolls are very similar. Both are sweet breakfast or dessert pastries that require yeast to leaven the dough.

Sweet rolls is the broad category for this type of pastry while a cinnamon roll is one specific type of sweet roll.

These strawberry rolls are another kind of sweet rolls. Think of them like the cousin of the cinnamon roll.

For both cinnamon rolls and these strawberry rolls the base dough is very similar.

Both doughs are yeast doughs with the usual suspects: flour, milk, egg, butter, sugar, a touch of salt and of course yeast.

DO STRAWBERRY ROLLS HAVE CINNAMON IN THEM?

Sometimes cinnamon rolls will have cinnamon in the dough as well. These strawberry rolls do not.

While the dough is similar, the filling is the big difference.

While cinnamon rolls are filled with a layer of cinnamon and sugar, these strawberry sweet rolls are filled with a layer of your favorite strawberry jam before they get baked and drizzled with a delicious glaze.

This particular recipe doesn’t call for cinnamon in the filling, but a very light sprinkling of cinnamon over the jam is delicious. It’s perfect if you want a strawberry infused, traditional cinnamon roll.

CHOOSE YOUR YEAST WISELY!

Part of the trick to making these strawberry rolls so perfectly fluffy is picking the right yeast.

There are several types of yeast available. Make sure you use instant yeast. 

Instant yeast is different from active dry yeast.

According to the Kitchn, the two can be used interchangeably but you have to dissolve active dry yeast in water first. Instant yeast, on the other hand, you can mix right into the dough, which is what you will do here.

MAKING STRAWBERRY ROLLS

Making sweet rolls intimidates a lot of beginning bakers.

To make the dough, add your warm milk, yeast, sugar, salt, butter, and egg to a large mixing bowl, and whisk together. Once you’ve whisked the ingredients together, switch your mixer attachment to the dough hook.

Now add your flour in and mix all your ingredients together well.

Your dough shouldn’t stick to the bowl. If it does, you can add a bit more flour. Continue to kneed the dough with your hands until it’s well combined.

Once it’s well combined, put the dough in a bowl and cover the bowl with a towel. Make sure you put the bowl in a warm spot, and let the dough rise covered for an hour or until it has roughly doubled in size.

Once the dough has risen, punch it down in the center with your hands and roll the dough out onto a floured surface until it makes a large rectangle. Then cover the dough with a thin layer of strawberry jam.

Now you can roll the dough up tightly so it makes a long log. Once you have a dough log, cut 1 1/2 inch pieces of the roll off and place them in a greased baking dish.

At this point, cover the dish with a towel and the rolls rise again.

Once they have risen, bake them for about 12 minutes or until they are lightly golden. Then let them cool and whisk together your icing ingredients until the icing is smooth.

Lastly, pour the icing over the strawberry rolls.

OTHER SWEET ROLL VARIATIONS

You can use this dough recipe and method for making any number of other sweet rolls. You don’t just have to fill them with strawberry jam.

If you’re not into strawberry but feeling like a fruit roll, follow the instructions for making the dough and substitute your favorite fruity jam filling. Raspberry jam filling would be delicious. Blackberry too!

In fall, you could try them with pumpkin or apple butter. And if you want something super decadent, stuff the rolls full of Nutella.

The possibilities are endless!

Ingredients

  • 1 cup of Milk warm or room temperature
  • 1 tablespoon of INSTANT Yeast
  • 2 tablespoons of Sugar
  • 1 teaspoon of Salt
  • 3 tablespoons of Salted Butter soft
  • 1 Egg
  • 3 and 1/2 cups of Flour
  • Strawberry Jam
  • 1/4 cup of Butter
  • 2 cups of Powdered Sugar
  • 1 teaspoon of CLEAR vanilla extract
  • 5 tablespoons of Milk

Instructions

  • Preheat the oven to 325°.
  • Add your milk, yeast, sugar, salt, butter, and egg to a large mixing bowl, and whisk together.
  • Add in flour, using a hand mixer or stand mixer with dough attachment, mix all ingredients well. (Dough should not stick to the bowl. Add more flour if need be.)
  • Knead gently with hands until flour is mixed into dough and well combined.
  • Place dough into a bowl, cover with towel, and place into a warm, dry area.
  • Let rise for one hour and punch dough with hand in center.
  • Roll dough out on to a floured surface, forming a large rectangle.
  • Cover the top of your dough with a thin layer of strawberry jam.
  • Roll dough up tightly, and cut into 1 and 1/2 inch slices, using a sharp knife or dental floss.
  • Place cut rolls into a greased baking dish. Cover and let rise for 1 hour.
  • Bake for 12 minutes until LIGHTLY golden.
  • In a mixing bowl mix together butter, powdered sugar, vanilla, and milk, until smooth.
  • Pour your glaze over COOLED cinnamon rolls.
  • Serve and enjoy!
